This is my favourite taco stuffing by far! The places here in NYC really screw it up. I've gotten pretty close to the real spit grilled ones at home, but I'm still not quite there yet. Will have to try your brilliant version(adding soda is a great idea!) next time I have pork butt sitting round.

What you're really drinking with Corona is burro piss. Go with Modelo if you truly want a quality Mexican beer.

Ha! My mind went in the same direction as the zenchef's. A corona sounds good. Or maybe better yet, some tequila splashed into the Jarrito soda. The dish looks fabulous!

Here in Southern California we eat all kinds of tacos, and I pride myself of my fried oyster taco with aji amarillo sauce, but this is new to me, with pineapple and cloves, these ingredients sing! Can't wait to try!

25 years ago I started my cooking career with a street stall in Cambridge, UK. I sold satays with peanut sauce, and cajun steak wraps with fresh lime and sliced chillis. A group of Mexican students used to come every day because my food reminded them of home in spirit. They told me that one of their favorite things was a hot sandwich of roasted pork with fresh pineappple, chilli and lime. Thanks to you I have now realized 25 years later what they must have been referring to.

That photo made me want to lick the screen. I do love it when I can get some good tacos al pastor. Sweet spicy pork and pineapple are a wonderful combination.

I've had the pleasure of drinking pineapple Jarritos as a Mexican restaurant in my neighborhood. It took a while for them to get a liquor license, so I always had my pineapple jarritos when I was there. Good stuff for sure!
