Hi, Marc! I've gotta say, you're comment really pleased me. It was like the comment that validated everything we're trying to do w/ this blog. Thank you so much for 'getting it' as well. Just checked out your menu in NC and I've gotta say, if we're ever down in your neck of the woods, we've got to check your restaurant out! Delcious. And I'm so glad you understand about trying not to be condescending while still wanting to talk and read about food in an intelligent, authentic and creative way. There IS such a thing as food theory! I'm so glad you can see that stuff in us. GRACIAS!! Please stop by again.

I'm glad you had a chance to dine there. Gabrielle Hamilton is one of my favorite chefs, and though I've transplanted to the south (where, at least in Charlotte, the use of local heirloom products and preservation of local food types is more the norm then the exception) I always recommend Prune to my customers that are heading back to my old stomping grounds! Great blog by the way, it's always good to see foodies who "get it" which isn't meant to be condescending, but rather in the way that chefs talk about food, food ideas and food theory. It can be tough to make a statement and a living at the same time, but when customers become part of that conversation it makes it all the more worthwhile!

Terrific restuarant review - makes me want to jump on the next flight to NYC to try some of these delights. I agree that it is fun to try more adventurous dishes when eating out than your usual chicken, beef and pork.
