That's the great thing about cooking - you adjust things to your liking. Thanks so much for this comment! This is such an old post, it's worth redoing w/ better pictures. we must spatchcock 20 times in a year... it's the best way to cook chicken, hands down!

The first time I tried this, I made it for some friends using what spices I could scrounge up in my parents' kitchen and it was a huge success! I've made it again for my family and they all think it's delicious.

Since I'm not a fan of lemon pepper (and because there wasn't any), I used 1 tsp each of onion powder, garlic powder, and black pepper in place of it.

Now, I pass this recipe on to anyone who'll listen!

Wow! Absolutely fabulous! I "spatched the cock," rubbed it and roasted it *in the oven* at 350 (it was raining here in MN this afternoon.) My family all agree it was the *juiciest* chicken ever! Don't think I'll ever cook a whole bird any other way. Thanks so much for your wonderful instructions!

Love the article! Excellent illustrations. Thank you so much. I'm planning to make this tonight. With regards to the derivation of the term "spatch-cock," I humbly suggest that it is a contraction of the term "spatulate cock." Where "spatulate" means flat, shaped like a flat spoon - the same root as the word spatula (obviously.) Just my academic 2cents in partial compensation for a fabulous article and recipe!
