Another delightful reading from you guys! Maybe a little late for me to post but very nice article. Having spent time in Madrid, my sister leaves there, I know what a Fabada is, I would love to have a stomach 3 times the size every time I visit. Spanish cuisine is nothing short of amazing (although I’m italian), my second favorite.
If you want to try the best of Callos Madrileños (same profile dish), next time visit La Casa del Botín in Madrid, which happens to be the oldest restaurant in the world, with all respect, a foodgasm .

the dreaded pork sweats! but if it had to happen, at least it was the result of a truly memorable meal in a wonderful location. i’m embarrassed to recount the number of times i’ve inflicted the pork sweats upon myself, sometimes thwarting my ability to eat for several days afterward.
