Jonathan:

We are in New Zealand. With so much lamb here and having had braised lamb several times we decided to try ourselves. Being boaters, we love using the pressure cooker.

BTW, Lamb shanks here are called lamb knuckles.

We followed you recipe, more or less (actually doubled it for left overs).

We let stand for 30 minutes then left in the cooker for another 15 minutes and the result was amazing.

Thank you so much. BTW, your recipe calls for using 3/4 stock but says nothing about the remaining 1/4. We just used it all.

Thanks again.

Ahhh, Kilroy_60... thanks for the response. You're a man/woman after my own heart! I agree that denying yourself of pleasures if messed up and ridiculous. Life is about pleasure! I've had steak and fries for breakfast (mainly cause I was hungover and craving it) and I eat homemade fatty burgers for lunch sometimes... no one can tell me I can't! BUT, my point was, that there are alot of people in this country who are strategically marketed junk food to and who eat it most often. THIS is what I have a problem with. I'm not saying that all this crap can't be ingested by whomever wants them, but I do believe that having it so easily available and cheap makes it alot harder to resist as a 'normal' way of staying alive. Take a cheeseburger from Burger King and compare it to one you make at home (or even one you buy at your local grill/restaurant). You can not tell me that the nutritional value in the Burger King version is the same as the one made with fresh beef. It's probably also 1/2 the price to buy the 'good' stuff. Anyways, I'm tired and in a food coma so I can't defend it anymore... but thank you so much for the comment. Anyone who loves HFT is a friend of mine. Rock on, Kilroy! - amy

"Healthy" people drop over dead every day.

People who consistently deny themselves this, that and the other, who limit their possibilities and step away from what could be enjoyable...in the name of good health, frequently don't live any longer than the people who indulge heartily.

I say, screw 'em if they can't take a joke.

If I want steak and eggs for breakfast and a big fat burger with fries or onion rings for lunch - with a few beers no less - and whatever I choose for dinner...I'm doing it and I don't want people hassling me about it.

Fast food - although it's not fast and most frequently wrong if you go through the drive thru - is a hallmark of America. I don't think doing what is proposed by the "experts" referenced in this post is doing to make any significant difference to stop people from doing what they want to do!!

---(-)-> On a personal note, I hope you'll come by for a look at the Progressive Dinner Blog Carnival I have coming up. I think it could be a great way for us to work together.

Cheers!
