<p>In our humble opinion, there is a serious and shameful lack of sodas made with real sugar available in America today. When we were in Argentina last year, among the most (of many) pleasurable experiences was drinking a Coke out of a small bottle and having it taste like it used to. The fact that soda companies in America are now releasing &#8220;special&#8221; and &#8220;old school&#8221; editions that contain sugar instead of high fructose corn syrup just lampoons this ridiculous situation.</p>
<p>Now, we&#8217;re not exactly giant soda drinkers, and when we do indulge, we tend to go for things like San Pellegrino&#8217;s limoncita, except of course when we&#8217;re enjoying Mexican tortas (sandwiches) for lunch at the Mexican-run deli on our Brooklyn block. Then, we will always get a nice cool bottle of Jarritos, and most commonly, the flavor is pineapple (piña). Imagine our delight then, when we were recently invited to sample all 11 varieties of Jarritos. <span id="more-1610"></span></p>
<p>Since 1950, Jarritos (meaning &#8220;little jars/jugs&#8221;) have been making a bevy of sodas that are as varied in flavor as they are brightly colored. Less carbonated than typical American sodas, and due to their containing actual sugar, they can taste a little over sweet and syrupy to the modern American palate. It&#8217;s a sweetness I happen to enjoy, and so I&#8217;m delighted that Jarritos is now challenging the US soda behemoths and selling their drinks over here too. And, to further sweeten the pill, as it were, Jarritos are, for a limited time, holding the <a href="http://www.jarritosnation.com/">JarritosNation!</a> contest, in which you can gather points from each bottle of Jarritos soda to win digital cameras or a trip to Hawaii, which is strange given that Jarritos is made in Jalisco, Mexico.</p>

<p>Of course, slurping one down with a chorizo, ham and guacamole torta is one thing, but cooking something imaginative with a highly flavored and sugary soda is another thing entirely. In all honesty, we didn&#8217;t make a giant mental leap in using pineapple flavored Jarritos to make tacos al pastor given the pineapple that is central to that preparation. However, it was fantastically delicious!</p>
<p>It&#8217;s thought that tacos al pastor are a fairly recent invention in Mexican cuisine, and are a fusion of traditional Lebanese shwarma-type lamb kebab preparations (hence <em>al pastor</em>, meaning shepherd&#8217;s style) that the Mexicans changed to suit their taste for slow-cooked pork marinated in vinegar with a smoky pepper sauce. In Mexico, it&#8217;s usually found in specific tacos al pastor stands where fat elephant legs of juicy, spicy, sweet pork are shaved off and slapped between a couple of corn tortillas and served very simply with a zesty avocado salsa and a couple of chunks of pineapple.</p>

<p>Pineapple, both sliced and in juice form, is used in the marinade and the cooking sauce for tacos al pastor, and we decided to substitute it in the former with Jarritos piña in order to add some sweetness and pineapple flavor to the acidity of the vinegar that is used to tenderize the pork. It was not clear whether this necessarily added a huge amount of pineapple flavor to the pork at this stage because we subsequently baked it in a roasted guajillo, ancho and pasilla puree liberally studded with slices of pineapple for an hour and a half until it was fall apart tender, but I like to think it played its role in what is, however you make it, a dish made up of many layers of flavor.</p>
<div class="recipe"><strong>Tacos al Pastor &#8211; Shepherd&#8217;s Tacos</strong> &#8211; serves 4<br />
<em>(adapted from recipe found on Mexicanfoodandmore.com)</em><br />
<strong>Ingredients</strong><br />
- 2lbs pork shoulder or butt meat, cut into 2 inch lumps<br />
- 1 cup cider vinegar<br />
- 1 bottle Jarritos Piña<br />
- 5 dried guajillo chile peppers<br />
- 5 dried pasilla chile pepper<br />
- 2 dried ancho chile pepper<br />
- 1 medium tomato, toasted, peeled and seeds removed<br />
- 2 medium onions, finely chopped<br />
- 1/2 head of garlic peeled<br />
- 1 tablespoon cumin powder<br />
- 5 cloves<br />
- 1 cup pineapple juice<br />
- Salt to taste<br />
- 12-16 small corn tortillas<br />
- limes wedges<br />
- 4 tablespoons finely chopped cilantro</p>
<p><strong>Recipe</strong><br />
- Marinate the pork in the vinegar and Jarritos piña soda for about 2 hours.<br />
- Remove and drain.<br />
- Meanwhile, rehydrate the guajillo, pasilla, and ancho chilies in about 3 cups of hot water until soft and redder.<br />
- Remove the veins and seeds.<br />
- Combine the chilies, tomato, half the onion, garlic, cumin and cloves and blend until smooth. Add the pineapple juice and salt to taste. &#8212; Heat oven to 350F (190C) and in line the bottom of a 9 inch (20cm) baking pan with pineapple slices, arrange pork pieces in one or more layers on top of this. Then, add a second layer of pineapple rings and pour pepper sauce overtop. Cover baking pan tightly with foil, and bake for 1 1/2 hours.<br />
- Remove pan from oven, and with tongs, remove pineapple and pork from sauce before transferring sauce into a sautee pan.<br />
- Reduce sauce by about 1/3 or until viscous and quite thick.<br />
- Serve with warm corn tortillas, salsa de aguacate (spicy avocado sauce) and Jarritos soda, or beer if you prefer.</div>

<p>Ever have one of those days where the only thing that gets you through is knowing you are going to have a good meal later on?  I have no idea where I read about this dish, but one day, trying to unwind after a long, frustrating and tiring day of putting out the fires that are usually started by teenage drama (I moonlight as a school counselor, in case you forgot), a mental picture of this dish formed in my head and I immediately went to the store to try and make it.  This dish is definitely not for the nut-hater.   But, maybe it could be?  As a girl who used to eat peanut butter on a spoon every day for breakfast (I&#8217;ve now matured to peanut butter spread on multigrain toast), this dish made me very, very happy. <span id="more-1223"></span></p>

<p>It&#8217;s not surprising that Pollo en Salsa de Cacahuate  is a traditional dish from <a href="http://en.wikipedia.org/wiki/Puebla" target="_blank">Puebla</a>, Mexico.  Puebla is often thought of as the gastronomic mecca of Central Mexico and happens to be the birthplace of <em>mole</em>, that beautiful, dark, chocolatey sauce made of over thirty ingredients including nuts and seeds, and pipians, another sweet yet savory sauce using ground nuts and seeds.  Peanuts have been part of Mexican cooking since long before Spain invaded in the 15th century and are often used as a thickening agent.  Poblano cuisine, specifically,  is typically made of indigenous and local ingredients and, let me tell you, Pueblo is on my &#8220;must go&#8221; lists of places to travel to (and eat, eat, eat in).</p>

<p>Traditionally, this dish should be made with dried chiles.  We used dried chiles in ours and I really just wanted to kick it up, so I added some chipotles in adobo.  For me, it added extra spice and the adobo added more flavor than the dried chiles did. In fact, I think you could leave out the dried chiles if you don&#8217;t have any on hand and just add some chipotles in adobo. It&#8217;s rare I&#8217;ll move away from the traditional but, in this case, flavor-wise I think it would be ok.  I also did not make this in a mortar and pestle and, again, although not traditional, a blender worked <em>just </em>fine.</p>

<div class="recipe"><strong>CHICKEN WITH PEANUT SALSA (<em>Pollo en Salsa de Cachuate</em>)</strong><br />
(serves 4)</p>
<ul>
<li>2 to 3 lbs. of chicken pieces with skin</li>
<li>1 to 1 1/2 cup unsalted raw peanuts, lightly roasted till brown</li>
<li>1 small onion, chopped</li>
<li>2 dried pasilla (or guajillo) chiles, rehydrated and chopped up</li>
<li><a href="http://www.allysonskitchen.com/p-2427-la-morena-chipotle-peppers-in-adobo-sauce-13-oz.aspx" target="_blank">3 chipotles in adobo</a> + some of the adobo (if you don&#8217;t like it spicy, start with 1 or 2 and decide if you want to add more)</li>
<li>2-4 cloves of garlic (depending on how much you like garlic),whole</li>
<li>1/4 teaspoon cinnamon</li>
<li><em>optional</em>: 1/8 teaspoon ground clove</li>
<li>squeeze of lime</li>
<li>pinch of freshly ground pepper</li>
<li>hot chicken stock</li>
<li>some oil</li>
<li>blender</li>
</ul>
<ol>
<li>Season your chicken pieces with salt and pepper and saute in a bit of oil until brown all over.  When skin has taken on color and is a bit crispy, remove to a plate.</li>
<li>In a separate  dry pan, brown peanuts &#8211; this doesn&#8217;t take long &#8211; about 30 seconds if that. Don&#8217;t burn them! Take off heat and keep on the side.</li>
<li>Add a bit more oil if necessary and throw in your garlic, onions and rehydrated pasilla and saute until they take on some color and the onions soften.</li>
<li>In a blender, first add the onion,  garlic and pasilla mixture and blend with a bit of warm chicken stock.  Try to puree it as best as possible.   Add the chipotles along with a tablespoon of adobo and blend.  Add the peanuts to the blender along with another bit of chicken stock and puree until smooth.  You do not want the texture of the sauce to be like peanut butter, you want it smooth with some liquid in it. Add the cinnamon, clove and some fresh ground pepper.  Blend.  Taste  the sauce for extra seasoning. Does it need more salt or pepper? Do you like it spicier?  Add more adobo or whole chipotles if you do.  Add a bit more chicken stock so it is not too thick.</li>
<li>When sauce is as you like it, bring it back to the pan you cooked the chicken in and add some along with a bit more chicken stock. With a spoon, pick up all the goodness that collected at the bottom of the pan and stir. Add the chicken to the pan, add a bit more sauce along with a bit more stock and allow chicken to simmer for another fifteen to twenty minutes.  Add a squeeze of lime juice to the sauce.  Serve with some rice and enjoy.</li>

Those readers who&#8217;ve been following us for a while know (and, we hope, appreciate) that we frequently put our bodies and constitutions on the line for your benefit. Indeed, some of you may remember, that during our stay in Madrid last year, one of us, quite literally, <a title="The road of excess leads to the palace of wisdom" href="http://www.weareneverfull.com/fabada-a-mortal-and-corporeal-sin-but-definitely-worth-it/" target="_blank">pushed himself to breaking point in this endeavor</a>. It was a valuable life-lesson that everyone has their limits &#8211; specifically, in this case, that one&#8217;s daily quota of pork products should not exceed the weight of one&#8217;s head.</p>
<p>And it was because of this humbling reminder of mortality that we were unable to visit a very tempting restaurant that lay just across <em>Calle de Campomanes </em>from our hotel (the curiously-titled <em>Roommate Mario)</em> in the <em>Opera</em> district of the city. Every day for a week, we walked (or, as our stay progressed, waddled) past this restaurant (it didn&#8217;t appear to have a name), re-reading and salivating at the names of dishes advertised on the sunshades overhanging the windows: <em>paella marinera</em>, <em>paella bogavante</em>, <em>arroz al horno</em>, <em>paella valenciana</em>, <em>arroz atianda</em>, and <em>arroz negro</em>.<span id="more-276"></span></p>

<p>At the time, we convinced ourselves that this was no big deal since we were in Madrid to eat Madrileño food, not rice dishes from the Levante (eastern Spain, around Valencia/Murcia, so-called because that&#8217;s where the sun rises), and certainly not in the chilly depths of winter when rib-sticking dishes like <em>cocido madrileño</em> and <em>callos a la madrileño</em> were the order of the day. Of course, we flagrantly disobeyed this rule on a couple of occasions (see our previous posts on <a title="Papas Arrugadas - Wrinkled Potatoes" href="http://www.weareneverfull.com/work-your-mojo-with-some-mojo-%e2%80%93-papas-arrugadas-con-mojo-rojo-y-mojo-verde-wrinkled-potatoes-with-red-pepper-and-cilantro-sauce/" target="_blank">Canarian </a><em><a title="Papas Arrugadas - Wrinkled Potatoes" href="http://www.weareneverfull.com/work-your-mojo-with-some-mojo-%e2%80%93-papas-arrugadas-con-mojo-rojo-y-mojo-verde-wrinkled-potatoes-with-red-pepper-and-cilantro-sauce/" target="_blank">papas arrugadas</a> </em>and <a title="Spanish Marine Rice - Arroz Marinero" href="http://www.weareneverfull.com/arroz-marinero-spanish-marine-rice/">Galician </a><em><a title="Spanish Marine Rice - Arroz Marinero" href="http://www.weareneverfull.com/arroz-marinero-spanish-marine-rice/">arroz marinero</a></em>), and during our current lengthy bout of winter-induced, home-bound funk, we found ourselves, in our related regret-filled nostalgia, wishing that we&#8217;d made one more exception.</p>

<p>So, to appease these feelings, what we were unable or unwilling to eat in Madrid, we decided to make ourselves right here in Brooklyn. A couple of sachets of cuttlefish ink, some D.O. Calasparra rice, and a little help from Penelope Casas&#8217; <em>The Foods and Wines of Spain </em>resulted in a quite magnificent traditional Murcian <em>arroz negro</em>.</p>
<p>Do not be confused about it, the rice is, and should always be, the star of the dish. Do not be tempted to listen to the voices in your head telling you to add more seafood: this is not a black paella (though traditional Valencian paellas contain no seafood). Rice, in this case, is not just a starchy canvas on which the more tasty and colorful protein displays itself, as it is commonly thought of in the American and British mind. Use only the amount specified below, otherwise you risk distracting your tastebuds from the point that is the extraordinary manner in which the squid (or cuttlefish) ink, together with pimenton, saffron and a hint of garlic, delicately perfumes the rice. A crisp white wine (as called for in the recipe) or a dry rose would make a perfect match.</p>
<p>Our good friend <a href="http://recipespicbypic.blogspot.com/2008/10/arroz-negro-black-rice-my-third-and.html" target="_blank">Nuría of Spanish Recipes Pic by Pic made what is, by any measure, a superior <em>arroz negro</em> on her third attempt</a>. Having been unable (at least for now) to find squid or cuttlefish complete with their ink sacs, we&#8217;re not optimistic that we&#8217;ll be able to mimic the wonderful inky blackness of Nuría&#8217;s dish, but next time we try, I think we&#8217;ll add an extra packet of dry ink to see if we can get closer to that beautiful color.<br />

<li>2 pounds octopus (with tentacles)(ab0ut 8 squid), sliced (if you find them with their ink sacs you&#8217;re very lucky, and use these in place of packets listed below)</li>

<li>1/4 cup dry white wine</li>

<li>4tbsp finely chopped flat-leaf parsley</li>
<li>3 3/4 cups (1.5ish liters) fish broth or clam juice (make 4 cups in case you need a little extra)</li>
<li>3 tbsp olive oil</li>
</ul>
<p>For garlic sauce:</p>
<ul>
<li>3 cloves garlic, crushed</li>
<li>1/2 cup olive oil</li>
</ul>
<p><em><strong>Recipe</strong></em></p>

<li>Preheat oven to 325F (160Cish)</li>
<li>Clean the squid, cutting bodies into rings and chopping up tentacles.</li>
<li>In a wide 2-3inch deep casserole dish (preferably earthenware), or paella (pan), heat oil and saute onion and green pepper until both are wilted.</li>
<li>Add squid rings and tentacles and saute for around five minutes before adding chorizo, garlic, tomato, parsley, salt, pepper, saffron, and pimentón. Cover and simmer gently for around 30 minutes.</li>
<li>Meanwhile, follow directions on packets for reconstituting the squid/cuttlefish ink, and pass black liquid through a sieve to remove impurities. Mix ink with wine.</li>
<li>After 30 minutes, stir in rice and when well combined, add broth (boiling hot) and stir in ink/wine and toss in shrimp.</li>
<li>Bring to a boil and stir occasionally until rice is no longer soupy, about 10 minutes. Decorate with pimento strips and put dish in oven and bake uncovered for around 15 minutes until all remaining liquid is absorbed.</li>
<li>Remove from oven and cover tightly and allow to sit for 10 minutes.</li>
<li>While rice is resting, add garlic in a food processor or blender, and with motor running gradually pour in olive oil until well combined and golden.</li>
<li>Place dish in the middle of the table and encourage diners to stake their claim. Serve garlic sauce on the side.</li>

Over a year ago when we were in Madrid, Spain we had two dining experiences that were particularly memorable. They were memorable because these were the spots we ended up just doing an eenie-meenie-minee-moe way to pick it. Sometimes those restaurants, the type that involve zero research or reading of reviews, that end up being the best.  The first experience <a target="_blank" href="http://www.weareneverfull.com/arroz-marinero-spanish-marine-rice/">we chronicled on this here blog many moons ago</a>, but the other one has not reared its head until now.  Luckily for us, that day we stumbled upon the only true and authentic Canarian restaurant in Madrid – <em>El Escaldon</em>.<span id="more-278"></span></p>
<p>Neither Jonny nor I have ever been to the Canary Islands and we were excited to try some of its indigenous foods even though we were over 1700 kilometers away. As Jonny and I took a seat at the bar, we got comfy and ready to wile away the night with a few bottles of wine and a vast selection of Canarian and Madrileños treats. The wonderful hostess of the restaurant helped us order some of her favorite dishes, one being a specialty of the Canary Islands called Papas Arrugadas. A steaming plate of small white potatoes with a white coating on their extremely wrinkled skin was placed in front of us. Next to them, dipping sauces. My face lit up with joy – carbs AND dipping sauces on the same plate? This could be my version of heaven! Those who know me well know how much I love to dip anything into anything. In fact, in eighth grade I was often made fun of for foregoing the school lunch and instead going to the salad bar “fixings” tray and eating a bowl of crutons dipped in various salad dressings as my lunch. Healthy, huh? I ended up earning the title of “Condiment Queen” (not Condom Queen, folks) for my love of dipping. But I digress…</p>

<p>Potatoes were first cultivated in the Canary Islands in the later 1500’s when the conquistadores brought them over. In fact, the first mention of potatoes existance was in Peru in 1552 and the first documented on the Canary Islands was in 1567. So, it is greatly believed that the first origin of the potato in Europe came from the Canary Islands.</p>
<p>Why are they not called patatas, like in Spain but instead called papas like the Latin Americans call potatoes? Well, because this is a specific type of potato that it is believed to have been brought over to the Canary Islands from Peru.  These are always small, between 2 and 5 inches in length and grown in a mountainous region. The papas come in three colors: pink, <em>bonito</em>, which is pale yellow, and black. The bonito and <a target="_blank" href="http://shop.tucanarias.com/producto.php?prd=259">black </a>are the more prized type, especially the black because it slightly resembles a truffle.</p>

<p>The wrinkled outer skin of the potato comes from boiling them in heavily salted water. Originally this dish was made using seawater, so keep that in mind when adding the salt to your boiling water. Because we didn’t have any of the potatoes the specifically grow in the Canary Islands, <a target="_blank" href="http://www.recipetips.com/glossary-term/t--35863/creamer-potato.asp">we used small white potatoes (baby creamers) and small red (new) potatoes</a>, which worked just fine. This popular Canarios dish is often eaten on it&#8217;s own as a tapa or as a side dish to meat of fish.  Papas Arrugadas aren&#8217;t always served with both the Mojo Verde and Mojo Rojo (also known as Mojo Picon), but I liked the choices of dipping sauces.  Both sauces went perfectly well with our grilled loin of lamb.  The Mojo Verde reminded me of a version of <a target="_blank" href="http://www.weareneverfull.com/getting-6-meals-out-of-5-italian-style-roasted-pork-shoulder-with-salsa-verde-and-creamy-risotto/">salsa verde</a>. <a href="http://www.flickr.com/photos/weareneverfull/3292973663/" title="Papas Arrugandas with Mojo Rojo and Mojo Picon by SeppySills, on Flickr"><img width="500" src="http://farm4.static.flickr.com/3488/3292973663_4299cf80fb.jpg" alt="Papas Arrugandas with Mojo Rojo and Mojo Picon" height="375" /></a></p>
<p></a>This dish would even be great as finger food at a party.  Don&#8217;t be afraid by the amount of salt used in the dish because the final result ends up being perfectly salted.  So pretend you&#8217;re in the Canary Islands and give these Papas Arrugadas a try.</p>
<p><strong><u>PAPAS ARRUGADAS  (Serves  4)</u></strong></p>
<p><em>Ingredients for Potatoes</em>:</p>
<ul>
<li>2 pounds of small potatoes (either red/new or creamers or a mixture of both)</li>
<li>water</li>
<li>2 to 3 cups of coarse salt</li>
</ul>
<p><em>Ingredients for the Mojo Rojo/Picon:</em></p>
<ul>
<li>1 to 2 cloves garlic, minced and smashed into a paste</li>
<li>1/2 teaspoon cumin</li>
<li>1 small to medium red pepper, roasted, skin removed and deseeded</li>
<li>1 teaspoon smoked paprika (pimenton)</li>
<li>1 teaspoon salt</li>
<li>3/4 cup of olive oil</li>
<li>3 teaspoons of sherry vinegar or white wine vinegar</li>
</ul>
<p><em>Ingredients for Mojo Verde</em>:</p>
<ul>
<li>1 to 2 cloves garlic, minced and smashed to a paste</li>
<li>1/2 teaspoon cumin</li>
<li>1 big bunch of cilantro (with stems) &#8211; maybe two handfulls</li>
<li>1 teaspoon salt</li>
<li>3/4 cup of olive oil</li>
<li>3 teaspoons of sherry vinegar or white wine vinegar</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Boil enough water to hold the potatoes and add the salt. When the water comes to a boil, add the potatoes and allow to cook uncovered for 20 minutes.</li>
<li>While the potatoes are cooking, make your mojo rojo.  Add all ingredients except the olive oil into a food processor or blender.  With the motor going, slowly add the olive oil and taste for seasonings. Some people like thier mojo more acidic and others don&#8217;t &#8211; add more seasoning if you would like it and olive oil if it seems too acidic for you.</li>
<li>Clean out your food processor/blender and make your mojo verde by following the same instructions as Step #2.</li>
<li>After the potatoes have cooked for 20 minutes, drain the excess water and put the potatoes back in the dry pan and turn the heat on up to medium &#8211; high.  Allow the potatoes to &#8220;dry&#8221; the excess water off in the hot pan.  Swirl the pan around so that the potatoes don&#8217;t stick.  Do this for about five minutes.  You should see the potato skins get a white film on them and the skin will wrinkle a bit. </li>
<li>Serve the potatoes with the mojos in bowls.  We served ours with some grilled lamb loins that were marinated in some garlic with a sprinkling of salt and pepper.  Enjoy!</li>

<p>We are fortunate enough to live in a city with a ridiculous amount of diversity when it comes to restaurants, and one place we frequent often is a &#8216;hip&#8217; Colombian restaurant (what the hell, it is Brooklyn). When we go there it&#8217;s because of two things: 1) We&#8217;re friggin starving and are ready to eat till we drop and 2) we want to get drunk. They have very strong drinks, and the food, shall we say, ain&#8217;t exactly light either. Maybe the strong drinks are to help your appetite and enable you to eat more?</p>

<p>One of the favorite menu items is the very popular and typical Colombian dish <em>Bandeja Paisa</em>. Yes, I wasn&#8217;t lying when I called it a &#8220;gut buster&#8221;. There is no way in hell I&#8217;m not unbuttoning my jeans when I decide to order this one. Originating from northwestern Colombia (the province of Antioquia), this dish&#8217;s name stems from <em>bandeja</em>, meaning tray or platter, and what the people of the region are known as, <em>paisas</em>, or country-folk. The idea is that this mixed platter would be eaten at lunchtime after a hard morning working in the fields and would be followed (like there would be a choice!) by a lengthy siesta before anything resembling work could resume.</p>
<p>In 2005 the Colombian government planned to make <em>bandeja paisa</em> the national dish, but instead with the name of <em>bandeja montañera </em>(mountain tray). This move was actually faced with widespread opposition, citing that only a small percentage of the population actually eats <em>bandeja</em> (perhaps unsurprisingly, or they&#8217;d all be in cardiac arrest and/or 500lbs). However, the government persisted and now you can find all sorts of Colombian tourism paraphernalia advertising bandeja as the national dish &#8211; perhaps in a daring bid to encourage obese gringos to head on down for a feast&#8230;?</p>
<p>Anyway, like many traditional dishes the exact combination of ingredients/items often differs depending on who you ask, but, again, like many traditional dishes, there are a number of ingredients that all versions contain. Arepa (a thin shallow-fried corn cake), grilled marinated skirt steak, pork chicharron (crispy, deep-fried pork belly cracklins), a fried egg, chorizo, red beans (stewed red beans) and rice. [Note: some versions contain other foods including <a target="_blank" href="http://www.weareneverfull.com/fabada-a-mortal-and-corporeal-sin-but-definitely-worth-it/">morcilla</a> (blood sausage), sweet fried plantains, avocado, vinegary shredded red cabbage salad, fried potatoes, tomato sauce, and hogao (aka criollo sauce made with onions, tomatoes, pepper, oregano, cumin, and salt).] We combined our beans with the chorizo, substituted the rice with yucca fries, and cut the richness of the meal with the traditional Colombian condiment, <em>aji</em>.</p>

<p>Estimates vary, but it&#8217;s a meal of between 1,500-1,800 calories (that&#8217;s most of your daily intake), and yes, that&#8217;s right, and it&#8217;s all eaten for lunch. I, who can hardly sit up straight at my desk after a sandwich and an apple for my midday repast, find it almost impossible to imagine engaging in manual labor even after only half a plate of this magnitude. Combine this with the nearly year-round equatorial heat that part of Colombia enjoys, and I&#8217;d be retiring to my hammock for forty (or more) winks, which is why we tend to save up our <em>bandeja</em> eating for the colder months, and happily for us (but not our cardiologist) those months are on the way. So, get out the largest plate you own, starve yourself for a couple of days ahead of time, consider cancelling your plans for the afternoon, and get stuck into a <em>bandeja paisa </em>- it&#8217;s only your waistline at risk!</p>

<p>So, because this is a meal made up of many constituent parts, and because, with our version, we tinkered with the traditional ingredients a bit, what follows is basically a run-down of recipes starting with the most time-consuming preparations.</p>
<p><strong>Stewed Pinto/Red Beans with Chorizo</strong><br />

<p><strong>Yucca Fries</strong></p>
<ul>
<li>1 medium sized yucca (cassava), peeled and cut into 1/4inch (1cm) rings or half-moons</li>
<li>2 cups vegetable oil, heated to 350-375F</li>
<li>1tsp kosher salt</li>
<li>Fry yucca rings until golden and crispy. Remove to plate covered with paper towels to drain, and sprinkle with salt.</li>
<li>Keep warm in oven if not eating immediately as they get chewy and tough if left to cool</li>
</ul>
<p><strong>Skirt Steak</strong></p>
<ul>
<li>Sprinkle steak lightly with salt, pepper and rub generously with sliced garlic.</li>
<li>Marinate in olive oil until ready to grill.</li>
<li>Heat skillet or grill to screaming hot. Brush marinade off steaks and grill on each side for about 2-3 minutes (depending on thickness &#8211; use poke test regularly) for a nice medium-rare.</li>
<li>Cover with foil and allow to rest for 5-10minutes.</li>

<li>Allow to marinate and grow together for as long as a couple of days.</li>

<li>drain on paper towels, then dress with butter/margarine and serve immediately while still warm</li>

<li>Combine all these ingredients together and let sit for at least an hour or as long as 2 days for the flavors to improve</li>

<p>Then, combine all this goodness on a plate (we suggest you share it with at least one other person unless you want to drift into a food coma you may never come out of) and enjoy with the latin cocktail of your choice (avoid beer, it makes everything swell up), or perhaps, as the Colombians would, accompany it with a few shots of aguardiente!</p>

Another element of this package was a jar of Spanish Marcona almonds. These almonds are amazing on their own and taste incredibly different (sweeter and meatier) than the almonds we know here in the States.  I decided the first thing I wanted to try to do was a Romesco Sauce.  This meal came together quickly and using things that were already in my fridge so I refuse to call this an authentic Romesco &#8211; but it&#8217;s close!  Romesco is a classic Catalan (specifically from Tarragona) thick &#8216;dressing&#8217; made with a variety of things including almonds, garlic, bread, olive oil, peppers, pimenton (paprika) and tomatoes.  There are many variations of recipes for Romesco as some use hazelnuts, red wine vinegar, onion, some roast their tomatoes and garlic and sometimes mint is added.  Romesco is served as an accompaniment to many dishes, but most often with fish and seafood and sometimes with poultry and veggies.</p>
<p>The most popular ways to serve classic Romesco with vegetables is with the famous Spanish <em><span>calçots</span></em><em>.  </em><em><span>Calçots</span></em> are a variety of longer, thicker and sweeter scallions that are also grown in Tarragona, Catalonia (a perfect local pairing!) and are produced in a very specific and time-consuming way with a season lasting only from January to March.  Every January or February the <em><span>calçots </span></em>are harvested and many Catalonians celebrate this with a huge <em><span>calçotada</span></em> or a kind of calcot fiesta.  At this big party, Catalonians sit at long tables and consume pounds of <em><span>calçots</span></em> which have been charred on a grill of burning vines and then wrapped in newspapers in order to finish cooking in steam.  The participants dip the fleshy, sweet insides of the <em><span>calçots</span></em> into romesco and wash it down with copious amounts of red wine.  Meat and bread are often grilled right after the calcots are. I am hoping to one day taste these beauties but mostly I&#8217;m excited to one day be part of a <em><span>calçotada.</span></em></p>

<p>Anyways, back to the meal we made. Earlier I mentioned that I called my sauce a Romesco-esque sauce because I kind of was forced to use what I had in my kitchen.  I did not have any of the dried sweet peppers called nyora which are normally used but that was probably because they are very hard to come by here in America.  In fact, I didn&#8217;t even have the substitute that is often used here such as an ancho pepper, so I used what I had (and, purists, I know you&#8217;ll kill me because Romesco should never be spicy but I needed to use up a half of salmonella-free jalapeno).  Also, Romesco should always be made with fresh tomatoes and I didn&#8217;t have any so out came the jar of crushed tomatoes.  I also decided to thinly slice some fennel and an onion and sweat them down slowly in a pan with some olive oil.  After a half hour of slowly sweating down, you get the sweetest most delicious &#8220;relish&#8221; which I topped our grilled fish with as well.</p>

<p>In the end, all the flavors melded together perfectly. Maybe it was the crunchiness of the grilled trout skin, possibly the moist trout flesh mixed with the smokey, sweet and nuttiness of the Romesco-esque sauce or it could have been the bliss of having a bit of crunchy potatoes with the moist fish along with the sweetness of the onion/fennel relish?  Whatever it was, this meal was a homerun.  I hope you try your hand at making Romesco and maybe you have a good story of attending a <em><span>calçotada?  </span></em></p>

<p><u><strong>GRILLED RAINBOW TROUT WITH ROMESCO-ESQUE SAUCE AND FENNEL-ONION RELISH &#8211; serves 2</strong></u></p>
<p><em>Ingredients for fish and fennel-onion relish: </em></p>
<ul>
<li>1 whole rainbow trout, gutted and cleaned</li>
<li>1 tablespoon unsalted butter</li>
<li>salt and pepper</li>
<li>1 fennel, thinly sliced (use a mandoline &#8211; it&#8217;s easier)</li>
<li>1 onion, thinly sliced (I used vidalia onion for it&#8217;s sweetness</li>
</ul>
<p><em>Ingredients for Romesco Sauce:</em></p>
<ul>
<li>6 tablespoons crushed tomatoes (or 4 roasted tomatoes)</li>
<li>2 tablespoons Spanish sweet pimenton (or sweet paprika)</li>
<li>10 Marcona almonds (if using other type of almond, make sure they have been pan-roasted for a minutes and the skin is removed)</li>
<li>1 piece of toasted white bread (crust removed)</li>
<li>1 tablespoon red wine vinegar</li>
<li>1/2 of a pepper, traditionally a dried red pepper (I used jalapeno &#8211; not traditional at all, but gave it a little kick)</li>
<li>1/2 head of roasted garlic</li>
<li>1 sprig of mint</li>
<li>olive oil</li>
<li>pinch of salt</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Heat about 1/4 cup of olive oil in a pan and on medium to medium-low heat, cook your onions and fennel down for about 20 to 30 minutes until very soft and translucent.  Do not let them brown and make sure you stir every few minutes.</li>
<li>Roast your 1/2 head of garlic in a 475 degree oven for about 15 to 20 minutes (or until soft inside).  Allow to cool before using.</li>
<li>Make your Romesco by adding the bread, almonds and pepper first and grind up finely in the food processor.   Next add the other ingredients (don&#8217;t forget to squeeze the roasted garlic out of the skins!) except the olive oil and salt.  Blend until smooth.  Finally, with the food processor going, slowly add the olive oil in a slow stream until the Romesco is thick and fully emulsified.  Taste for salt and add to your liking.</li>
<li>Rub your whole fish with the butter and season inside and out with salt and pepper. Throw on a hot grill and cook until firm on both sides (about 5 to 7 minutes per side depending on size of fish).</li>
<li>Eat fish whole or fillet the fish and top with some romesco sauce and a tablespoon of the onion/fennel relish. Serve with greens or crispy roasted potatoes.  Drizzle some olive oil all over before serving.</li>

<p>This meal took about 15 minutes, but that&#8217;s only because we had about 15 peppers which had been grilled the weekend before for a bachelorette party (aka &#8220;hen do&#8221; in other parts) my sister threw for a friend of hers down at the shore. We tried to stay out of their way, but with no male stripper for me to corrupt, I felt no need to be in the &#8216;thick of things&#8217;. What I did love was the variety of penis paraphernalia.  Nothing screams &#8220;bachelorette party&#8221; like penis-shaped straws, penis whistles, a penis-shaped chip tray, penis-shaped pez-on-a-necklace (ohhh the fun&#8230; and the taste!) and phallic-shaped skewers of grilled chicken and peppers for the girl&#8217;s to dine on before their boozy night out. Fortunately for us, the friend who brought the ingredients for the skewers must&#8217;ve thought the party was bigger, because she brought about 4 huge ziplock bags filled with marinating red, green, yellow and orange peppers. They barely used any, so we skewered the rest of them, grilled them up and took them back to Brooklyn with us. So, there we sit a day later with a few leftover garlic-butter soft-shells, a few bags of grilled peppers (thanks, Jackie!) and a bunch of penis-straws. What to do? First, taunt husband with penis straw. Check.  Next, put penis straw under husband&#8217;s pillow. Check.  Finally, get rid of all those pounds of grilled peppers by making some pepper aioli, reheat those crabs and grill some delicious fresh rolls.  Check!</p>

<p>If you don&#8217;t have the soft-shells, you can so get creative with this meal. Grill some salmon, fry some white fish dipped in batter or herbed flour, grill chicken or pork, maybe even throw some ground lamb burgers on the bun instead. This pepper aioli was so unbelievably delicious and versatile, we found ways to use it the rest of the week. So bring out your inner bachelorette (even you guys&#8230;.work it), blow on your penis-shaped whistles and chomp into a <strike>penis-shaped</strike> soft-shell sandwich (or your topping of choice) with pepper aioli.</p>
<p><u><strong>SOFT-SHELL CRAB SANDWICHES ON BUTTERED GRILLED ROLL WITH PEPPER AIOLI AND CAPERS</strong></u></p>
<p><em>Ingredients</em>:</p>
<ul>
<li>2 large soft-shell crabs (or other topping of your choice &#8211; battered and fried white fish, grilled or sauteed salmon, lamb burger, fried calamari, etc&#8230; use your imagination!)</li>
<li>some shredded savoy or napa cabbage</li>
<li>2 tablespoons of capers</li>
<li><strong><em>For the aioli</em></strong> (<strong><a href="http://www.weareneverfull.com/christmas-dinner-rundown-recipe-2-fritto-misto-di-mare/" target="_blank">feel free to use our roasted garlic aioli instead</a></strong>):
<ul>
<li>blender or food processor</li>

<li>1 cup of either roasted or grilled red, orange and/or yellow peppers (make sure they have been cooled and try to remove some of the skin if possible if it&#8217;s been charred)</li>
<li>1 egg yolk (fresh eggs and organic, if possible, are best here)</li>
<li>1 clove garlic (for a less strong flavor, roast the garlic first)</li>
<li>1 teaspoon (or a few shakes) of hot sauce</li>
<li>1 tablespoon paprika</li>
<li><em>Optional</em>: 1 tablespoon of curry powder</li>
<li><em>Optional</em>: 1 tablespoon of chipotle powder</li>
<li>extra virgin olive oil (have at least one cup handy)</li>
<li>juice of 1/2 a lemon (or more to taste)</li>
<li>salt to taste</li>
</ul>
</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Place all of your ingredients except the olive oil, lemon and salt into your blender or food processor and blitz or pulse till smooth.  You may have to scrape the sides a few times in order to get everything pureed.</li>
<li>With the lid on, slowly stream in your olive oil as you keep the blender/food processor on constant puree and allow the aioli to emulsify (meaning mix together to form a thicker puree).  You may not need to use the whole cup of olive oil.  When you notice it getting emulsified, stop and taste for consistency and flavor.  Keep adding more oil if you like it very thick.</li>
<li>Squeeze in some lemon and a pinch of salt, whizz it up again and taste to make sure seasoning is to your liking.</li>
<li>Meanwhile, heat up your frying pan with a bit of olive oil and a tablespoon of butter and allow to melt. Cut your rolls in half and place both halves face down and allow to crisp up a bit.  After they have toasted a bit, remove from pan and place on the side.</li>
<li>With the remaining oil and butter in your pan, reheat your soft-shells by sauteing them again.  After 2 or 3 minutes, flip them to cook on the other side.</li>
<li>Assemble your sandwiches by placing the softshell on the bottom of the bun followed by the cabbage and a drizzle of olive oil, a pinch of salt and pepper and a squeeze of lemon.  Top with the aioli and capers and enjoy!</li>

<p>In celebration of the start of Euro 2008 &#8211; the European soccer/football championships &#8211; yesterday, and in light of the fact that England failed to qualify because they were awful, I am in need of a team to follow, so have decided to become an honorary Spanish soccer fan for the next month, or however long it takes for them to get knocked out.</p>
<p>The reason for this, you see (and yes, I&#8217;ll get to something actually food-related soon, so please be patient), is not just because I love Spain and am fascinated by nearly all things Spanish, it is also because historically, the Spanish team has always been long on potential but very short on delivery. And as an English football fan, I can appreciate this complex psychology of pitting hope against realistic expectations, and the likelihood of some great moments followed by the depths of despair.</p>

<p>So, to get into the spirit, I decided to watch the opening games of the tournament (neither of which actually featured Spain &#8211; they don&#8217;t play until Tuesday against Russia, but I&#8217;ll be at work then) with a couple of cold beers and, fittingly, a &#8220;seleccion de pintxos/pinchos&#8221; (small tapas on rounds of bread and often eaten off a toothpick) &#8211; the Spanish national team are known as &#8220;La Seleccion.&#8221;</p>

<p>Perhaps unsurprisingly, I found that this is the perfect kind of sports-watching food. It&#8217;s easy and cheap to make, with four or five ingredients plus a couple of staples from your fridge, you can make a variety of pinchos to suit the tastes of any friends you&#8217;re watching it with, and best of all, they are much, much healthier than the conventional bags of chips and salsa, cheetos, or miscellaneous frozen things with dip. This last one is important, because should your team lose, disappointment and self-loathing will be all because of the game, not the snacks! </p>
<p>These pinchos were made from, variously: manchego cheese, piquillo peppers stuffed with meat and cheese, cured anchovies, lettuce, lemon peel, <a href="http://www.weareneverfull.com/morcilla-stuffed-squid-bloody-hell/" target="_blank">leftover morcilla stuffed-squid</a>, grilled Spanish mackerel, capers, olives, and the very wonderful thing that is leftover Rioja-style chorizo and potatoes (a dish Paul Bocuse declared to be one of the greatest dishes created by man). </p>

We spent about 4 hours walking around the <a target="_blank" href="http://www.museoreinasofia.es/portada/portada.php">Reina Sofia</a> drooling over <a target="_blank" href="http://en.wikipedia.org/wiki/Guernica_(painting)">Picasso&#8217;s Guernica</a> (the size of a giant museum wall) and the large amount of <a target="_blank" href="http://en.wikipedia.org/wiki/Salvador_Dal%C3%AD">Dali</a> and <a target="_blank" href="http://en.wikipedia.org/wiki/Joan_Mir%C3%B3">Miro</a> works. We&#8217;re not really artsy-fartsy folks, but that museum made me wet myself with joy. The more we travel, the more I&#8217;ve been enjoying museums. But the second my stomach growled in the hallowed halls of the Reina Sofia, I knew it was only a matter of time till I either ripped a painting off the wall and attempted to eat it or I ripped off my husbands head just because he was there and I was annoyed. See, when Amy gets hungry she becomes a bit of a biotch. Ok, that&#8217;s an understatement according to anyone who knows me. When Amy gets hungry and can&#8217;t find food right away she is basically a <em>total</em> bitch. Even worse, when Amy is wet and hungry she will let you know that she&#8217;s pissed and take it out on who ever is closest to her. I know, I know, it&#8217;s not fair and it&#8217;s mean, but I think of my stomach the way a man thinks of his penis. Just as many men think with theirs, I think with my stomach and when I need it satisfied, it must be satisfied immediately.</p>
<p>As we walked around Madrid on our final afternoon of vacation, starving and cold (I know, poor me, right?), I thought I was going to die if I didn&#8217;t get some food in me. It always happens that when you want something you never can find it, but the second you stop looking, there it is. Well, the second I just gave up on finding an open restaurant, there she was &#8211; a warm, inviting, cozy and delicious-smelling Galician restaurant &#8211; <a target="_blank" href="http://eating-madrid.blogspot.com/2008/01/gallego-style.html">Taberna Maceira</a>. The menu offered an array of food and if I had my choice, I probably would&#8217;ve ordered the whole menu. But the <a href="http://www.flickr.com/photos/weareneverfull/2227693844/" title="Menu, Madrid by SeppySills, on Flickr"><img align="right" width="375" src="http://farm3.static.flickr.com/2144/2227693844_2ef81880f5.jpg" alt="Menu, Madrid" height="500" /></a>thing that caught our eye was the Arroz Marineiro (that&#8217;s the Galician spelling for <em>Arroz Marinero</em>) which happened to be a mid-day special. The fact that the menu specifically told you, in so many words, to be patient because this dish takes at least 25 minutes to make, even as hungry as I was, made me smile. We ordered a huge cheese plate with five different types of Galician cheeses and a large jug of wine. Within five minutes I was warm, buzzed and happy. When the steamy hot cauldron of rice, tomato stock and various types of seafood came out, I started to realize that I could be happy sitting in that cozy Galician restaurant with the jug(s) of red wine, my husband and this steamy hot bowl of Arroz Marineiro for the rest of my life&#8230; or at least until the rain passed in a few hours.<br />

This dish is similar in flavors to a paella but the main difference is the consistency. It should be like a soupy stew with a bit of the broth left on the top of the rice so you can get a bit of the broth with each bite. Most recipes have a variety of fish included in it. Kind of like the<a target="_blank" href="http://www.weareneverfull.com/somethings-fishy-round-here-livornese-fish-stew-il-cacciucco-alla-livornese/"> livornese fish stew</a> we made ages ago &#8211; it all depends on what&#8217;s fresh and what&#8217;s available. The dish&#8217;s name translates to<em> Marine </em>or <em>Sailor Rice</em>. The small bit of history I could find about this dish told me that it was an easy dish for those that lived on the sea to make with what was readily available. We brought back some razor clams with us from Spain, so we used some of these along with whatever else I could pick up at my local store. Although we weren&#8217;t sitting in Madrid when we ate this fabulous healthy meal, it did bring me back to that afternoon.<br />

<p><u><strong>ARROZ MARINERO &#8211; SPANISH MARINE RICE (serves 2 to 3 as mains)</strong></u></p>
<p><em><strong>Ingredients:</strong></em></p>
<ul>
<li>1 onion, diced</li>
<li>2 cloves garlic, minced</li>
<li>4 to 6 whole, peeled tomatoes (can be from a can), chopped</li>
<li>6 cups hot stock (preferably fish stock)</li>
<li>1 roasted red pepper, peeled and cut into 2 inch strips</li>
<li>olive oil</li>
<li>2 tablespoons pimenton (paprika)</li>
<li>pinch of saffron</li>
<li>a variety of seafood: squid cut in rings, clams still in shell, shrimp with shells removed, mussels, white fish cut in 1-inch chunks</li>
<li>2 cups of Valencian rice (Arborio or Bomba rice would work &#8211; regular white rice would work only &#8211; ONLY &#8211; if you can&#8217;t find the other 3)</li>
<li>some chopped parsley</li>
<li>lemon</li>
<li><em>Optional but not traditional</em>: some peperoncino or a hot pepper to spice it up</li>
</ul>
<p><em><strong>What to do:</strong></em></p>
<ol>
<li>In a pot, saute the onions and garlic for a few minutes in some olive oil. After a few minutes, add the clams and mussels along with a bit of hot stock (like 3 or 4 tablespoons) and stir a bit. Put a lid on the pot and give it a few minutes to steam. Don&#8217;t let the onions and garlic burn. Lift the lid every 2 minutes to check if the shells have opened. Stir around if necessary and put lid back on. Keep doing this until the shells of the clams and mussels have completely opened. Remove to a bowl and hold until ready to plate.</li>
<li>Add the chopped tomatoes, roasted red pepper, squid and fish to the sauteed onions and garlic. Cook for a minute then add the pimenton and saffron. Stir for around for a minute then add the rice and stir, allowing rice to absorb all the flavors in the pot.</li>
<li>Add all the broth and stir. Bring the rice to a boil and then turn heat down a bit and allow the rice to cook in the heavy simmering liquid. You want in between a boil and a simmer. The rice should cook in about 20 minutes, but, like me, keep testing it for doneness every 5 minutes. About five minutes before the rice is finished cooking, add your shrimp.</li>
<li>When the rice is done, turn heat off, taste for seasoning and ladle rice along with some extra broth and plenty of seafood into a bowl. Top with some of the reserved clams and mussels. Squeeze some lemon juice on to the top along with some chopped parsley. Enjoy!</li>

<p>Lately, we&#8217;ve been making a lot of southern European dishes and we felt we needed a break, but we were also looking for a dish that wouldn&#8217;t take all night to make and require us to buy a load of ingredients we&#8217;d use for one dish and then sit and rot in our refrigerator. So, we decided to go old-school Japanese-American style and make a dish so reminiscent of the 1980s that you&#8217;d almost expect to look up from your plate and find Mr. Miyagi and Daniel-san across the table.</p>
<p>But instead of accompanying this dish with some studied fence-painting or the practicing of our wax-on, wax-off technique, we went for a really simple scallion salad called <em>Pa Muchim</em> we&#8217;ve been loving at Korean restaurants lately.</p>
<p>Both of these dishes are unbelievably easy and are perfect for a weeknight evening in, especially if you&#8217;re lucky enough to have the <em>Karate Kid</em> trilogy on hand for some post-dinner entertainment&#8230;</p>

<p><em><strong>Broiled Miso-Glazed Salmon with Udon Noodles</strong></em></p>
<p><em>Ingredients</em></p>
<ul>
<li>1 lb salmon fillet</li>
<li>4tbsp miso paste</li>
<li>1 x 8oz package ready to eat udon or soba noodles</li>
<li>2tbsp mirin</li>
<li>2 cloves garlic, crushed and chopped</li>
<li>1tbsp ginger, crushed chopped</li>
<li>1tbsp (reduced sodium) soy sauce</li>
<li>1/2 carrot julienned</li>
<li>1/2 red bell pepper julienned</li>
<li>3oz green beans</li>
<li>1tbsp peanut oil</li>

<p><em>Recipe</em></p>
<ul>
<li>Turn on your broiler to high and place a sheet of aluminum foil over a baking sheet and oil lightly.</li>
<li>Cut salmon fillet into two roughly equal portions and coat lightly on all sides with miso past, probably about half of it.Heat your wok or skillet to very high heat and add peanut oil. Then, quickly toss in the carrot and green beans. Allow to cook, moving constantly for about a minute until beans start to wrinkle a bit.</li>
<li>Hit pan with ginger and garlic. When you can smell these nicely, add the mirin and soy sauce, followed after a couple of seconds by the udon noodles. Stir these together so noodles are well coated with sauce and vegetables and then remove to a plate.</li>
<li>Slap salmon under broiler (skin side down first). After between 1-2 minutes or until miso starts to caramelize, turn fish over and broil for another 1-2 minutes skin side up.</li>
<li>When skin is crispy and glazed-looking, remove fish and serve over the noodles and top with scallion salad (<em>pa muchim</em>).</li>

<p><strong><em>Scallion Salad (Pa Muchim)</em></strong></p>

<p><em>Ingredients</em></p>
<ul>
<li>3-4 medium scallions (spring onions/chinese shallots)</li>
<li>2 tbsp rice wine vinegar</li>
<li>2 tsp white sugar</li>
<li>1 tbsp sesame oil</li>
<li>1/2 tsp red pepper flakes (chili flakes)</li>
<li>1 pinch coarse/kosher salt</li>
<li>1tsp toasted sesame seeds</li>
</ul>
<p><em>Recipe</em></p>
<ul>
<li>Slice scallions lengthwise into fine strips (1-2mm or 1/16inch wide) and submerge in cold water until curled &#8211; 30mins-1hr.</li>
<li>Drain well and place in a bowl then dress with remaining ingredients. Serve either as a garnish, side dish or panchan (mixed korean starters) to your favorite Asian dish.</li>
