With this eternal question in mind, I urge you to consider another conundrum for the ages, which may still puzzle some Hindu theologians: how to take enticing food photography of Indian food with its range of brownish-hued sauces? As we know only too well, appearances are crucial in the food world. <span id="more-2296"></span></p>
<p>Since the majority of Hindus swear off most meats, dairy and legumes (pulses) are essential proteins for the citizens of the sub-continent, and paneer, a firm, fresh cheese, is an important component of that diet. Paneer &#8211; which comes in a variety of styles in India, from super firm to an almost goat-cheese consistency, but is mostly limited to the former in our hemisphere &#8211; is something of a strange beast in that it neither melts nor competes for flavor with even the mildest of curries. Also, due to being typically coagulated with lemon juice or vinegar rather than rennet, it somehow manages to be wholly acceptable to vegetarians too.</p>
<p>A perennial, and, likely fruitless, desire to be good food bloggers but also possess the waistlines of triathletes, lately convinced us to expand our palates beyond our customary choices &#8211; <a target="_blank" href="http://www.weareneverfull.com/lamb-shank-rogan-josh-a-small-twist-on-a-classic-dish/">lamb rogan josh</a> and chicken bhuna &#8211; and include a vegetarian option and recipe on these here interwebs. Hardly groundbreaking, we know, but every day is a journey through the world, <a target="_blank" href="http://www.weareneverfull.com/hells-kitchen-hot-smelly-yet-delicious/">as described in a previous post</a>, and another recent stop was <a target="_blank" href="http://www.yelp.com/biz/patel-grocery-store-brooklyn">Patel Brother&#8217;s grocery store</a> at the far end of Brooklyn&#8217;s Sunset Park neighborhood.</p>

<p>Picking up fresh curry leaves, house-ground spices and a fat block of paneer at Patel&#8217;s, we ransacked the springtime growth of our tiny garden for English peas and threw together a matar (pea) aloo (potato) paneer curry with some cumin-seed scented basmati rice and some of the best heat &#8216;em up at home naan bread we&#8217;ve had.</p>
<p>Satisfyingly protein-packed and redolent of sub-continental flavors with the curry leaves and toasted spices, it came together in no-time flat. If you have access to good Indian supplies, this can quite easily become part of your weeknight repertoire and, even if you don&#8217;t, non-melting mild cheeses (like halloumi) are readily available and good peas are only a freezer section away.</p>

<p>Of course, Dr Dre headphones are almost certainly perfect for listening to all kinds of music, including hip-hop, but when sported by middle-aged business men one can&#8217;t help but assume they were borrowed from teenage offspring (who would surely pour merciless scorn on them for it), as which person of that demographic, in our image-conscious world, would risk public approbation and actually buy them? Taking a similar risk with crumby photos of this yellowish-brown dish we humbly request that you overlook appearances and trust us enough to try it.</p>

<strong>Aloo Matar Paneer (Potato, Pea and Cheese Curry)</strong> (serves 4)<br />
<em>Adapted from Rick Stein Coast to Coast</em></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>12oz paneer, cut into inch cubes</li>
<li>2 medium starchy potatoes, cut into 1 inch cubes</li>
<li>2 tablespoons neutral tasting oil &#8211; sunflower, safflower, canola, etc.</li>
<li>4 cloves garlic, crushed and chopped</li>
<li>1/2 large white onion, diced</li>
<li>1 inch piece ginger, chopped finely</li>
<li>2 birds&#8217;-eye, or other hot green pepper like serrano, chiles, finely chopped</li>
<li>1 teaspoon each of ground cumin and ground coriander</li>
<li>1/2 teaspoon each of ground turmeric and ground cayenne pepper</li>
<li>1/3 of a 12oz can whole tomatoes, roughly chopped or pulled apart</li>
<li>1/2lb fresh (or frozen) shelled peas</li>
<li>4 tablespoons julienned cilantro (coriander)</li>
<li>6 fresh (10 dried) curry leaves</li>
</ul>
<p><strong>Recipe:</strong></p>
<ol>
<li>Heat oil to medium high in a large pan or wok</li>
<li>Lightly fry paneer until golden on all sides, about five minutes. Remove from pan and reserve.</li>
<li>Add onions and cook until translucent. Add ginger, garlic and chopped chiles.</li>
<li>When aromatic, add dry spices and stir well to coat everything in the pan.</li>
<li>Fry gently for about three minutes.</li>
<li>Add potato, tomato, curry leaves and peas (if fresh) with 2-3 tablespoons of water.</li>
<li>Stir well and simmer gently for five minutes before adding paneer.</li>
<li>Simmer gently for another 5 minutes.</li>
<li>Season with salt and black pepper and sprinkle in chopped cilantro.</li>
<li>Serve with naan and pilau rice seasoned with cumin or caraway seeds</li>

<p>When our readers actually <em>read</em> our posts, it feels really good.  Because we often write a lot in our post, it is understandable why some may choose not to actually read our words. We understand how many blogs exist, and many only have time to do the &#8220;blog drive-by&#8221; (<em>you know what I&#8217;m talking about &#8211; the &#8220;I&#8217;m going to just look at the pictures quickly then comment something like damn! that-looks-deeelissssh!&#8221; drive by? We&#8217;ve all done it</em>).  But the thing we love the most about writing a blog about food from all over the world, trying to infuse history, cultural anecdotes and as much authenticity as possible, is when we get <em>schooled</em>.  It&#8217;s almost like a sick, food-centered type of masochism.  It&#8217;s almost as if we are bent over some Argentinian, Spanish, French or Italians knee as they spank us very hard telling us how wrong we were about _______________ (insert ethnic dish of choice here).  Knowing we have people actually reading what we write (and telling us how we can do things better) makes us feel all warm and fuzzy inside. It shows us that people are actually reading our words and are interested in enlightening people about their culture.  When we get something wrong on the blog, getting schooled helps us learn and grow and we love it.<span id="more-1567"></span></p>
<p>One may think that one of the best perks of having a food blog is getting <a href="http://www.weareneverfull.com/sigh-another-truffle-recipe-ravioli-with-walnut-truffle-cream-sauce/" target="_self">free truffle products</a> (ok, that friggin rocked), free yogurt (didn&#8217;t rock as much as the truffle) or free seasoning packets (that basically sucked) but my favorite &#8220;freebie&#8221; actually came in the form of a scanned in family recipe.  A bit ago, we received an email from a reader that asked us when we were going to take a stab at featuring &#8220;Arroz con Gandules&#8221; on the blog.  He read the blog and understood the research we do in regards to authenticity and asked us to please try his &#8220;Puerto Rican Lady Friend&#8217;s&#8221; recipe.  It happened to be a dish we had on that lovely &#8220;list of things to make for the blog&#8221; so, once we received this, we figured to look no further.  We tried the recipe (even having to email the reader back to make sure I could understand his handwriting correctly) and didn&#8217;t even bother with any more research.  It was that good and that easy to make and a perfect weeknight meal. If you want to mix it up a bit, do as our reader Christine does and serve it along with <strong><a href="http://www.weareneverfull.com/low-and-slow-even-more-succulent-pernil-but-only-if-you-have-the-time/">Puerto Rican slow roasted pork shoulder, Pernil</a></strong>, instead of the bits of pork.</p>

<p>Arroz con Gandules is often thought of as Puerto Rico&#8217;s national dish.  It is the dish that will most often be made for the Christmas dinner table and after one taste, you will see why.  What could be better than a one-pot meal with layers and layers of flavor?  What could be better than looking around at your kitchen thinking you have opened up a Goya shop (that is if you don&#8217;t make your own sofrito, sazon or use canned peas)  What could be better than being able to create a delicious crust of crunchy rice and spices goodness that can form at the bottom of the rice called &#8220;<a href="http://milamaga.files.wordpress.com/2009/12/arroz-pegao.jpg">pegao</a>&#8220;?(**We aren&#8217;t talented enough yet to get the pegao right, but I&#8217;ll be working on it as soon as we pony up and buy a real <em><a href="http://www.elcolmadito.com/USInstCocinaDetail.asp?OrderNumber=762" target="_self">caldero</a></em>).  So, here&#8217;s to Robert &#8211; the reader who so graciously supplied this recipe.  We may never have met you, but we think of you every month we make Arroz con Gandules!</p>

<div class="recipe"><strong>ARROZ CON GANDULES (Rice with Pigeon Peas) &#8211; serves about 6 as a main to 8 as a side/starter</strong></p>
<ul>
<li>8 (more or less) slices of bacon, chopped OR three chorizo links cut in chunks</li>
<li>4 to 5 pork chops, cut in chunks (by butcher or with a heavy cleaver) &#8211; about 1 to 1/2 lbs of pork</li>
<li>1 small onion, chopped</li>
<li>1 tomato, chopped</li>
<li>3 to 6 cloves of garlic (we love garlic, so put in as little or as much as you&#8217;d like)</li>
<li>6 ounces of <a href="http://www.saucenspice.com/images/products/detail/Goya-Sofrito_6oz.jpg" target="_self">Goya Sofrito</a> (or your own <a href="http://www.daisycooks.com/pages/recipes_detail.cfm?ID=1" target="_self">homemade sofrito</a> - <em>this is our go-to sofrito recipe</em>)</li>
<li>5 cups of water</li>
<li>1 can gandules (pigeon peas)</li>
<li>1 packet of <a href="http://www.texmex.net/products/sazon.htm" target="_self">sazón</a></li>
<li>1/2 teaspoon salt</li>
<li>pinch of oregano (about 1/2 tablespoon)</li>
<li>pinch of cumin (about 1/2 tablespoon)</li>
<li>pinch of pepper</li>
<li>2 bay leaves</li>
<li>1 cup of <a href="http://www.latinmerchant.com/productdetail.asp?ProductID=FV0002" target="_self">alcapparado</a> (or just pitted green olives)</li>
<li>2 1/2 cups white rice</li>
<li>olive oil</li>
<li>a lime</li>
<li>scallions</li>
<li>chopped cilantro</li>
</ul>
<p><strong>What to do:</strong></p>
<ol>
<li>Heat up a few tablespoons of olive oil in a heavy-bottomed pan (that also includes a nice, tightly fitting lid) on medium.  Add the bacon (or chorizo) and fry until well cooked but not super crispy.  Remove with a slotted spoon to a dish.</li>
<li>Season your pork pieces with some salt and pepper and fry in the remaining oil/rendered bacon fat until the get plenty of color.</li>
<li>After pork pieces get brown, add the chopped onion and tomato and fry for a minute. After a minute, add the garlic and cook for about 20 to 30 seconds.</li>
<li>Add the sofrito and, using a wooden spoon, scrape up all those delicious bits on the bottom of the pan created by the pork.  Allow sofrito to cook for about one minute.</li>
<li>Add the water, gandules, alcapparado/olives, spices and herbs, sazon packet and salt and pepper, stir and bring to boil.</li>
<li>When water comes to a boil, add the rice, stir once, cover and turn to low and simmer for 10 minutes.</li>
<li>As Robert&#8217;s &#8220;Puerto Rican Lady Friends&#8221; say, &#8220;DO NOT REMOVE THE COVER DURING THE COOKING INTERVALS!&#8221;.</li>
<li>Leave covered on low, simmering, for 30 to 40 minutes or until done.  Robert says you can check the rice every 10 minutes (but never removing the cover in between these intervals) but, I find that checking every 10 minutes is kind of unnecessary.  I usually check every 15 or so.  Either way, this part may take a tiny bit of practice until you really know your stove and how high/low the flame needs to be to perfect your rice.</li>
<li>After the 30 to 40 minutes, turn off heat and allow to steam for a few more minutes.  Remove cover, then fluff rice.   Serve in bowls and sprinkle with some chopped cilantro and sliced scallions and maybe a squeeze of lime.  Enjoy with a cold <em><a href="http://presidente.com.do/" target="_blank">Presidente</a></em>.</li>

<p>Originally, I was going to simply write a one paragraph post helping people understand that they should not be afraid to use butter when necessary. Unfortunately, I realized how much emotional turmoil I have when it comes to this subject and others.  A nice recipe for a Buttered Pea and Potato Salad had somehow turned into a major rant against fake butter and &#8220;light&#8221; olive oil.  I apologize to any margarine lover and extra virgin olive oil hater I may offend in the process of reading this post! <span id="more-853"></span></p>
<p>I think (and hope) that our countries obsession with being and eating &#8220;fat free&#8221; is pretty much over.  When the Atkins Diet was the biggest thing  I started worrying that the earth was coming to a quick end and we&#8217;d all die skinny but sad and craving a steaming bowl of pasta.   Why are some Americans so obsessed with supposedly eating &#8220;healthy&#8221; when they are actually eating completely unhealthy?</p>

<p>Substituting crap like margarine  for butter is ridiculous.  I think that <a href="http://wiki.answers.com/Q/Is_fake_butter_better_than_real_butter" target="_blank">this WikiAnswer</a> explains why.  In fact, <a href="http://www.seriouseats.com/2007/11/its-not-butterdeal-with-it.html" target="_blank">this Serious Eats post</a> helps put into perspective the vast number of fake butter &#8220;spreads&#8221; that exist around the world.  How sickening that people want to buy a <a href="http://en.wikipedia.org/wiki/I_Can%27t_Believe_It%27s_Not_Butter!" target="_blank">product</a> that actually tells them it is NOT butter?  Hello, people! They are <em>telling </em>us loud and clear that this is something created to taste like a real, natural product but isn&#8217;t!  Then why not eat the real thing? I&#8217;m so confused.</p>
<p>And while we&#8217;re discussing Americans ability to be a sucker for lower fat items while being willing to compromise it for lower quality, lower flavor and lower nutritional value, it&#8217;s no surprise that the US could&#8217;ve easily fallen for <a href="http://www.nypost.com/seven/04222008/news/worldnews/fake_olive_oil_no_virgin__italy_107517.htm" target="_blank">this trick</a> if it worked (and even though these guys were caught, I&#8217;m sure there are many make it here and are being purchased every day).  I shudder to think that anyone would actually buy something labeled &#8220;light olive oil&#8221;. Why? WHHHHHHHHHHHHHHHYYYYYYYYY (screaming)?  Why would anyone take something that is pure, natural and good for you and hack away at it until it can be labeled light? Light olive oils are a marketing hook, people!  They are not lighter in calories than regular olive oil but, instead, lighter in color, taste and nutritional value (hmmm, no crap &#8211; they are heavily modified through heating and filtering and <em>not </em>really olive oil!).  Here&#8217;s a look at what those light olive oils are really about:</p>

It is completely unregulated by any certification organizations and therefore has no real precedent to what its content should be. Sometimes, the olive oil is cut with other vegetable oils.</em></h3>

<p>So in order for consumers to feel like they are actually eating &#8220;light&#8221;, they are willing to compromise flavor, health and deliciousness.  According to a <a href="http://www.nytimes.com/1989/04/16/business/marketing-olive-oil-that-s-light-on-the-olives.html" target="_blank">1989 NY Times Article</a>, &#8216;<em>&#8216;Light olive oil was invented by the Bertolli company in this office in Secaucus, N.J.,&#8221; said William C. Monroe, president of Bertolli USA. &#8221;It&#8217;s an American invention.&#8221; </em>Nothing screams fabulous, healthy product like the words, &#8220;created in an office in Secaucus, NJ&#8221;.  Have you ever been to Secaucus?  Enough said. (<em>Why am I laughing at the thought of people taking vacations to trod through the &#8220;olive tree fields&#8221; in Seacaucus as a cheap alternative to a trip to Italy? Maybe those are the same people willing to buy into the whole light olive oil trick?</em>)</p>

<p>If anyone is going to use this &#8220;light&#8221; olive oil stuff, please keep it&#8217;s use to high heat cooking (olive oil has a low smoke point) or baking.  But, if that&#8217;s the case, why not just use other natural kind of oils?</p>
<p>I feel confident closing this rant by giving you a natural and delicious side dish recipe.  Use real unsalted butter.  Do not take shortcuts. Do not be worried about the fat. Did you know that 1 tablespoon of butter has less calories than 1 tablespoon of olive oil?  Don&#8217;t be afraid!  Just embrace it. Even our good friend, Caviar and Codfish used it in their <a href="http://caviarandcodfish.com/2009/06/29/magical-gardening-elves-and-snap-pea-potato-salad/" target="_blank">Pea and Potato Salad</a>!</p>

<strong>WARM BUTTERED PEA, POTATO, HERB AND PROSCIUTTO SALAD (serves 4)</strong></p>
<p><strong><em>Ingredients:</em></strong></p>
<ul>
<li>1/2 pound of fresh shelled peas (or a box of frozen peas)</li>
<li>8 small new potatoes, boiled till medium-soft and sliced in half (or about 12-16 fingerling potatoes)</li>
<li>1/4 pound slab of prosciutto (or you can get it sliced in thick slices), julienned</li>
<li>1/2 onion, thin sliced in half moons (we used Vidalia, but white onion or shallots could be used)</li>
<li>3 tablespoons unsalted butter</li>
<li>2 tablespoons julienned basil</li>
<li>2 tablespoons julienned sage</li>
<li>2 tablespoons minced chives</li>
<li>1 tablespoon minced parsley</li>
<li>salt and pepper to taste</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Boil potatoes until firm but not crunchy (between 8 and 12 minutes depending on size of potatoes). Use a knife to check. Remove from water using slotted spoon and reserve water.</li>
<li>Bring water back to boil and throw fresh peas in for two to three minutes until tender.  If using frozen peas, throw in for 30 seconds to one minute &#8211; they just need warming up.  Drain.</li>
<li>Immediately, in a bowl, combine the potatoes and peas with the herbs, prosciutto, onion and butter and toss it all together.  Finally, season with salt and pepper to taste.  Enjoy!</li>

<p>We&#8217;ve had such a cruddy spring here in NYC and it&#8217;s hard to believe the summer solstice is just a week and a half away. Luckily, it&#8217;s been chilly and wet during the work week and sunny and warm at the weekends.  It doesn&#8217;t make you feel that much better, though. You can&#8217;t fully get into the swing of summer because the weather just isn&#8217;t matching up.  It feels like early April and we&#8217;re two weeks into June.  Sadness.  I want to wear my freaking sandals again and eat dinner outside and not wear a COAT ANYMORE! <span id="more-708"></span></p>
<p>Venting over.  The one way we&#8217;re finding we can brighten our rainy, cool day is by cooking meals like this one.  Fish (and our Black Cod is sustainable&#8230; double happiness) reminds me of the beach, which reminds me of sunny days.  Morels and peas remind me of spring which (usually) remind me of flowers and sunny days.  Mint reminds me of my garden in the summer which, say it with me, <em>reminds me of sunny days</em>.  It was cool enough outside to use my oven, but we could just as easily have done this on the grill.  The minty pea puree was fabulous and could have been eaten with a spoon alone.  We paired this dish with some sliced Yukon Gold potatoes in their skin, sprinkled with olive oil and some herbs de Provence and crispily roasted in a hot oven.  While these are cooling down, you can finish your fish.</p>

<div class="recipe"><strong>BLACK COD WITH MORELS AND MINTY PEA PUREE</strong> (<em>serves two</em>)</p>
<ul>
<li>1 lb. black cod/sablefish, skin on</li>
</ul>
<p><strong><em>Green Pea Puree:</em></strong></p>
<ul>
<li>olive oil</li>
<li>1/2 tablespoon of butter</li>
<li>1 box frozen peas (or equal amount of fresh peas)</li>
<li>1/2 onion, diced</li>
<li>2 cloves garlic, minced</li>
<li>1/4 cup white wine</li>
<li>1/4 cup veggie or chicken stock</li>
<li>1/2 tbsp. ground fennel seed</li>
<li>15 mint leaves (about 1/2 cup)</li>
<li>10 basil leaves</li>
<li>2 tablespoons plain yogurt, drained</li>
</ul>
<p><em><strong>Morel Sauce:</strong></em></p>
<ul>
<li>15-20 morels, cleaned and trimmed</li>
<li>1 tablespoon olive oil</li>
<li>3 tablespoons unsalted butter</li>
<li>1/2 onion, minced</li>
<li>2 cloves garlic, minced</li>
<li>1/8 cup of white wine</li>
<li>1/8 cup of chicken stock</li>
<li>pinch of salt</li>
<li>pinch of pepper</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Make your green pea puree by putting a bit of olive oil and the butter in a hot pan.  Saute the onion and garlic until soft &#8211; about 2 to 3 minutes.  Add the peas, wine and stock and reduce by 1/2.  Turn up the heat a bit if necessary.  Add the ground fennel and stir.  Turn off heat and add everything to a blender.  Add in basil and mint along with the yogurt.  Puree in blender.  Taste for seasoning and add salt and pepper as necessary.  Set aside.</li>
<li>Heat oven to 400 degrees.</li>
<li>Make morel sauce by heating up olive oil and sauteing onion and garlic until it gets a bit of color.  Add the morels along with one tablespoon of butter and allow to saute for about thirty seconds.  Now add the wine and stock and reduce by half, slowly allowing to reduce. Could take about 5-8 minutes.  When it is reduced, stir in your final two pats of butter. Keep warm until fish is ready.</li>
<li>Make fish by rubbing the meaty side (non skin side) with olive oil. Sprinkle with some salt and pepper and some more ground fennel (optional).</li>
<li>Sear, skin side up in a screaming hot pan for 2 minutes until a crust forms.</li>
<li>Turn over skin side, kill heat.</li>
<li>Put into a 400 degree and turn off heat &#8211; allow to cook for 8-10 minutes depending on thickness.</li>
</ol>

Around the same time we were asked to test-drive a <a href="http://www.weareneverfull.com/nothing-says-i-heart-you-like-a-free-heart-cheesecake-and-a-view-of-a-pawnshop/" target="_blank">rich, decadent cheesecake,</a> we were also asked to try pasta from a company called <em><a href="http://www.garofalopasta.com/" target="_blank">Garofalo</a></em>. Now, dear readers, I really hope you don&#8217;t think we would sell out and become a blog purely about taste-testing and dedicated to kissing bum to those who dare to send us free stuff.  We will not ever become that type of blog. We will always be willing to try free food stuff (I stress the word <em>free</em>) but we will never, and I repeat NEVER say good things about something we hate.  I will not lie about free food products we receive and would rather, instead, just not waste my time writing about it.  But this pasta test-drive ended up being a way different experience than I thought it would be.<span id="more-297"></span></p>
<p>After that <a href="http://www.weareneverfull.com/nothing-says-i-heart-you-like-a-free-heart-cheesecake-and-a-view-of-a-pawnshop/" target="_blank">kick-a$$ cheesecake</a> we devoured I figured that free pasta would pale in comparison.  Boy was I wrong.  As most of you know, we prefer savory food over sweets and I&#8217;d take a big, steaming bowl of perfectly <em>al dente </em>pasta over a cheesecake any day.  I&#8217;m serious here. <em> Garofalo&#8217;s </em>pappardelle from their &#8220;signature line&#8221; did the trick. We paired this fabulously tasty pasta with a hearty Sausage Ragu and it held up while adding that perfect chew to the dish.</p>

<p>I know I go on and on (and on) about how important perfectly <em>al dente</em> pasta is to me, but I can&#8217;t imagine wasting a fabulous sauce on a crappy, soggy bit of pasta.  Too often if you follow the instructions on the back of a box of pasta you&#8217;ll be left with it way overcooked.  My rule of thumb is to always subtract two minutes from the given instructions and usually I get the perfect chew.  This time I decided to test <em>Garofalo&#8217;s</em> (hey, it was free) to see if their instructions were bang-on. 8 minutes is what it said and 8 minutes was all it needed.  Maybe they got it right because this pasta is actually made in Italy, &#8220;near the ruins of Pompeii&#8221;.  It actually tastes like it is made in Italy.  The other thing I love about <em>Garofalo</em> pasta is that they offer &#8220;different&#8221; pasta shapes besides the obvious penne, spaghetti and linguine.  Some of these specialty cuts include <a href="http://www.garofalopasta.com/cuts.html#pappardelle" target="_blank"><em>schiaffoni</em> (large oval-shaped noodle) and <em>calamarata</em> (like thick-cut calamari rings)</a>.  These are the types of shapes I want to eat when I&#8217;m bored of the norm.</p>
<p>No lie &#8211; I highly recommend this pasta, especially along with our deliciously hearty sausage ragu.  In fact, I&#8217;m writing the rep from the company to ask where I can get some in Brooklyn.  I have a feeling I&#8217;ll have to harass the manager at my local grocery store to order some, but it will be worth it.</p>

<span style="text-decoration: underline;"><strong>PAPPARDELLE WITH SAUSAGE AND PEA RAGU (serves 4)</strong></span></p>
<p><em><strong>Ingredients</strong></em><span style="text-decoration: underline;"><strong>:</strong></span></p>
<ul>
<li>1 lb. pappardelle (dried or homemade)</li>
<li>1 lb. ground sausage meat (or sausage links taken out of the casings)</li>
<li>1 onion, finely diced</li>
<li>3 cloves garlic, finely minced</li>
<li>1 teaspoon fennel seed, crushed</li>
<li>1 28-oz. can of crushed tomatoes (preferably San Marzano)</li>
<li>1 cup of red wine</li>
<li>1 cup of peas (I used frozen)</li>
<li>basil</li>
<li>salt and pepper</li>
</ul>
<p><em><strong>What to do:</strong></em></p>
<ol>
<li>Saute your onions and garlic in some olive oil for a few minutes to get some color on them.  Add the sausage meat and break up with a wooden spoon.  Allow to brown for 2 to 3 minutes and then add the fennel seed and stir.</li>
<li>Add in the red wine and stir into the meat.  Allow to cook down for a minute.  Add the whole can of tomatoes.  Let this cook on medium-low and stir.  It will cook for about 20-30 minutes until all the flavors come together.</li>
<li>While the ragu comes together, boil some salted water.  About ten minutes before you&#8217;re ready to eat, boil your pasta till al dente and add directly into the ragu along with a 1/4 ladel-full of pasta water. Add peas.  Cook for 30 seconds, toss in some basil and plate.  Serve with parmigiano reggiano. Enjoy!</li>

		<description><![CDATA[Last week I had off from work for our &#8220;midwinter&#8221; break.  It wasn&#8217;t a very relaxing week but cooking, for me, is very relaxing. <p>Last week I had off from work for our &#8220;midwinter&#8221; break.  It wasn&#8217;t a very relaxing week but cooking, for me, is very relaxing. Five hours of cooking can actually be quite relaxing as well.  And that&#8217;s what happened when I decided to take on the challenge that <a href="http://foodalogue.blogspot.com/2009/02/culinary-tour-around-world-ethiopia.html" target="_blank">Joan of Foodalogue put in front of her readers &#8211; create a dish from Ethiopia</a>.  I made six Ethiopian dishes and ingredients and, yes, it took me five hours to create all of it.  But, in the end it was all worth it.</p>
<p>Ethiopian cuisine is one that I have only recently become acquainted with and when I first tasted it, I was hooked.  While researching for this post I realized how little is out there on this fabulous cuisine.  Anthonly Bourdain recently said that he believed Ethiopian food would be the next big trend in eating and I have to agree that it should be.  It&#8217;s delicious, communal, flavorful, fun to eat and relatively healthy (except the ridiculously high amount of butter used in the dishes).  We&#8217;ll see if his prediction is correct.  I mean how can you go wrong when all you have to eat with is your hands and some deliciously sour, sponge and crepe-like bread called <em>injera</em>?</p>
<p><span id="more-280"></span></p>
<p>The two biggest staples of Ethiopian food are a spice mixture called <em>berbere</em> and a spiced clarified butter called <em>niter kibbeh</em> (see both recipe below).  Many Ethiopian recipes utilize one or both of these ingredients.  The other staple and accompaniment to Ethiopian food is injera bread which is traditionally made from a specific type of flour called <a href="http://ethnomed.org/cultures/ethiop/teff.html" target="_blank"><em>teff</em> </a>and usually takes three days in order for it to ferment causing its sour taste.  I didn&#8217;t have teff flour so I utilized <a href="http://www.saveur.com/food/classic-recipes/ethiopian-flatbread-1000053690.html" target="_blank">Saveur magazine&#8217;s recipe </a>which wasn&#8217;t as delicious as the authentic type but did the trick.  Brushing lemon on the bread gave it a bit of the sour flavor I was craving.  As mentioned earlier, injera bread is used as your plate, fork, knife and spoon when eating Ethiopian food.  Your food will come in small piles scattered on a a big injera where you will tear off bits of the outside layer in order to get the food in your mouth.  You continue until you eventually have to eat the layer that has sopped up all the flavors of each dish you chose.  These are some of the best bits but you&#8217;ve got to get to the end of the meal to savor them.</p>

<p>Ethiopian food is like no other &#8211; it borrows ingredients from Portugal (chile peppers), the Orient (ginger) and India (spices) to create a taste that is very, well, Ethiopian and very different to anything you&#8217;ve ever eaten.  Most of the recipes found below are based on things found in the cookbook <a href="http://www.amazon.com/Exotic-Ethiopian-Cooking-Hospitality-Traditions/dp/0961634529" target="_blank"><em>Exotic Ethiopian Cooking</em> </a>and a blend of other website recipes I found.  I recommend you all give Ethiopian a try, whether you have five hours to cook or have always been curious to try that Ethiopian restaurant down the street.  Vegetarians and non-pork eaters will have a field day and even the pickiest of eaters will enjoy this fun and fabulous cuisine.  So thank you, Joan, for pushing me to finally create Ethiopian food at home.  Now that I&#8217;ve done it I&#8217;ll be doing it again.  Now, I hope you will try your hand at it!</p>
<p><strong><span style="text-decoration: underline;">BERBERE (Ethiopian Spice Mix)</span></strong></p>
<ul>
<li>1/4 cup ground red pepper (about 8 Dried Chiles de Arbol, blitzed in a spice grinder)</li>
<li>1 teaspoon ground ginger</li>
<li>1 teaspoon garlic powder</li>
<li>1 teaspoon ground fenugreek</li>
<li>1 teaspoon ground cardamom (about 6-8 cardamom pods, blitzed in a spice grinder)</li>
<li>1/2 teaspoon ground nutmeg</li>
<li>1/2 teaspoon cloves (about 4-6 cloves blitzed in spice grinder)</li>
<li>1/2 teaspoon cinnamon</li>
<li>1/2 teaspoon ground allspice</li>
<li>3 tablespoons paprika</li>
<li>2 teaspoons dried onions, blitzed in grinder, or 2 tsp. onion powder</li>
<li>1 tablespoon salt and 1/2 tablespoon freshly ground black pepper</li>
</ul>
<p>**Grind chiles in a spice grinder. Toast all seeds for about 3 minutes, allow to cool and add everything to spice grinder and blitz. </p>

<li>1/4 teaspoon ground cardamom</li>
<li>1/2 teaspoon tumeric</li>

<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Melt butter on low heat and skim off the foamy, white layer that that floats to the top as butter melts (this is how you make clarified butter).</li>
<li>Add onion, garlic, ginger and spices and allow to cook on low heat for 15 minutes.</li>
<li>Turn heat off and allow to rest for 5 minutes.  Strain the butter mixture using a fine sieve or cheesecloth and store in a cool place.</li>
</ol>

<li>1 cup yellow split peas, soaked for 1 hour</li>
<li>1 cup of water (or veggie stock)</li>
<li>1 cup chopped red onion</li>
<li>1 tablespoon ginger (1 inch piece, peeled and grated)</li>
<li>2 cloves garlic, minced</li>
<li>2 jalapeno peppers, minced</li>
<li>1 tablespoon nitir kibbeh (spiced butter)</li>
<li>1/2 teaspoon tumeric</li>
<li>salt and pepper to taste</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Bring soaked split peas to a boil and then lower to simmer for 30 minutes.</li>
<li>Drain if there is extra water and then mash well (they will be very soft and will mash easily with a fork).</li>
<li>Add butter  to another pan and stir fry onion and garlic for a few minutes till onion is translucent.  Add ginger and spices and give a quick stir.  Add back the mashed split peas, jalapenos, salt and pepper and a cup of water (or veggie stock).  Reduce for a few minutes until you have a thick puree.  Serve on or with injera.</li>

<li>1 lb collard greens, stems removed and chopped</li>
<li>1/2 lb of cottage cheese (about 10 ounces), drained</li>
<li>1 inch piece of ginger, peeled and grated</li>
<li>2 cloves of garlic, minced and smashed to a paste</li>
<li>2 tablespoons nitir kibbeh (spiced butter)</li>
<li>salt and pepper to taste</li>
</ul>
<p><strong><em>What to Do:</em></strong></p>
<ol>
<li>Boil greens until tender.  Drain and press down to get rid of all the excess water. Finely chop greens.</li>
<li>Add butter to a pan and cook onions for five minutes then add ginger and garlic and cook for a minute or two. </li>
<li>Add greens and stir. If you find it needs a bit of moisture, add a touch of water or stock.  Add salt and pepper to taste.</li>
<li>Transfer to a bowl and stir in drained cottage cheese.</li>
</ol>
<p><strong><span style="text-decoration: underline;">ZIGNI WE&#8217;T (Ethiopian Spiced Beef Stew)</span></strong><br />

<li>Add rest of spices, stir. Allow to cook until meat is done, about 15 to 20 minutes.  Serve on or with injera.</li>

Instead of posting shots of us dressed up in costume as the tastiest parts of a pig&#8217;s anatomy, we&#8217;re celebrating All Soul&#8217;s Day and the arrival of a much-needed weekend with a classic Friday night dish from the British Isles (where in truth, Hallowe&#8217;en has never really caught on in the way it has here in America) &#8211; fish n&#8217;chips.</p>

<p>In the same way that there is probably some truth in the Chinese claim to have invented the noodle that became the ubiquitous Italian pasta, the origins of the archetypical British dish of fish n&#8217;chips seems to stem from Sephardic Jewish and French Protestant immigrants to the UK. In the mid-18th century, fishing trawlers became large enough to catch significant numbers of North Sea bottom-feeding white fish and domestic railroads expanded so that much of the UK began to have cheap and regular access to this fresh bounty. Also at this time, the potato-cooking skills of French Hugenot immigrants and the fish-frying traditions of Southern European Jews came together in what was to be a lasting and wildly popular marriage.</p>
<p>The French fry had been invented years earlier when the poor had first ventured to cook this new world tuber - originally only thought good enough for animal feed &#8211; and these techniques have continued to be refined to this day. Jews immigrating to the UK and other areas of Northern Europe having been expelled from Portugal and Spain brought matza (matzo, matzoh, matsah,) with them, which they knew to be an excellent coating for fish when ground or crumbed. Combining these two techniques with the endemic British passion for beer and deep-frying, resulted in one of the most famous exports from the British Isles since limey sailors began spreading a horrifying variety of VDs in port cities the world over. </p>

<p>Today&#8217;s fish n&#8217;chips (depending on where you go) still closely resemble the original ideas found in Portuguese fried fish dishes <em>pescado frito</em>, in which strips of fish are dunked in a light batter of water, matzo flour and salt, then rolled in crumbed matzo before deep-frying in a cauldron of hot oil. In fact, the Portuguese are sometimes credited with having introduced this technique to Japan where it developed into the extremely delicious tempura style. In the UK, beer was often added in place of water to the flour (typically plain flour nowadays, rather than matzo) and salt, with the resulting batter being richer, but somehow lighter, frothier and more golden colored.</p>

<p>The British habit of &#8220;chipping&#8221; potatoes into larger batons than the continental Europeans, and now the Americans, and only frying them once, appears to just be a local habit. Some have suggested that the UK picked up on an early potato-cooking technique and kept it while the more culinarily-advanced French and Belgians continued to experiment with thinner-cut potatoes and double-frying, so that they perfected the golden and crunchy <em>frites</em> of today. I prefer to think of the British technique to be based not on ignorance, but on textural appreciation. For why have a crispy deep-fried fish and pair it with something else crispy? Why not pair it with something softer and more unctious?</p>
<p><strong>My Life with Fish n&#8217;Chips</strong></p>
<p>Anyway, fish n&#8217;chips became incredibly popular in the UK and its colonies around the world, with the chip shop still a fixture on virtually every town&#8217;s high street in the UK, Ireland, Australia, New Zealand and South Africa. For much of my youth, growing up in provincial England, it was one of only two choices for cheap, take-away/out food &#8211; the other being the uniformly foul and greasy hole that was the <em>Golden Lantern</em> Chinese take-out, so fish n&#8217;chips played an important role in our Friday night social traditions. After choir practice at our local church, we&#8217;d often hit the chip shop for a &#8220;slap-up&#8221; dinner of cod &amp; chips with mushy peas, and bread &amp; scrape (sliced white bread with lard), all washed down with our weekly soda allowance &#8211; a can of <em>Lilt (a pineapple and grapefruit flavored soda).</em></p>
<p><em><img border="0" align="right" width="100" src="/images/mr_chips.jpg" height="60" />Mr. Chips</em>, the snappily-titled chip shop in my Cheshire town was universally known as just &#8220;the chippy&#8221; and, correspondingly - demonstrating some terribly enlightened feelings towards the town&#8217;s tiny, but most obvious, ethnic population - the <em>Golden </em>Lantern<em>, </em>was referred to as &#8220;the Chinky&#8221;. Subsequently, this ordinary little town has gentrified virtually beyond recognition, with all manner of ethnic restaurants elbowing aside these two bastions of atherosclerosis. However, echoes of these former times can still be heard in local parlance. Sadly, the <em>Golden Lantern</em> is gone, replaced by <em>Slow </em>Boat and <em>Treasure </em>Village, which now, demonstrating how times have changed for the better, are referred to as &#8220;the Chinese&#8221;; <em>Mughli</em>, an Indian restaurant, is either &#8221;the curry house&#8221; or &#8220;the Indian&#8221;, and <em>Est! Est! Est!</em> is &#8220;the Italian&#8221;.</p>

<p>Fish n&#8217;chip restaurants still play a significant role in British gastronomic and cultural life. As with many countries, the UK has recently undergone a revolution in its food traditions, returning to basics and local ingredients and striving for sustainability. This has led to a re-evaluation and revival of many traditional dishes, including the hugely devalued fish n&#8217;chips. With North Sea cod stocks (like cod almost everywhere) having crashed due to overfishing, some traditions have had to change, and now other white fish are used including hake, halibut and haddock in its place, but the typical methods of beer and matzo batter, quality malt vinegar, fine sea salt and first-class British potatoes cooked in beef tallow (beef lard) are emerging again, much to my delight.</p>
<p>We&#8217;re heading to London to visit my new nephew in a couple of weeks, and will be hitting up arguably the finest chip shop in the capital, <span class="subhead">Fryer’s Delight in Holborn, which you will be the first to hear about right here in these pages. </span>To date though, the best fish n&#8217;chips I ever had was at a very dodgy-looking chippy in Fleetwood, Lancashire (NW England, about 1.5hrs north of Manchester). Overlooking the grey and miserable-looking Irish Sea, I ate perfectly fried, golden cod, soft and salty chips and deliciously thick marrowfat mushy peas. It was a glorious, all-English experience.</p>

<p>But don&#8217;t think that fish n&#8217;chips only comes with mushies &#8211; oh no, variations abound in dressings. While the traditional is the simple sea salt and malt vinegar with a side of tartar sauce and M.P&#8217;s, others include, parsley sauce, brown gravy, curry sauce, garlic sauce, piccalilli, mayonnaise, Henderson&#8217;s relish, Worcestershire sauce, pea wet or pea&#8217;s water (liquid strained from peas during the creation of mushy peas) which is often free, baked beans, cheese or cheese curds, coleslaw, ketchup, chilli sauce, thousand island dressing, salad cream, chip spice, brown sauce, and summer savory (turkey stuffing &amp; gravy), to name but a few.</p>
<p>Ever striving for the traditional in our take on the dish, we went with a pale ale batter, beautiful Atlantic cod (yes, i know it&#8217;s unsustainable, but our fishmonger doesn&#8217;t sell haddock or hake) thick cut chips, homemade mushy peas, homemade tartar sauce and, perhaps excessively, homemade curry sauce &#8211; my wife being a huge fan of dipping sauces. In fact, all of them are fiendishly easy to make, but as with most simple dishes, the key is high quality ingredients. Old potatoes and a shitty piece of fish even when perfectly fried will still taste like a turd. Similarly, beautifully fresh potatoes and cod fried in rancid old oil will be a disaster. Make sure you buy everything as fresh as possible. Fresh potatoes have very few &#8220;eyes&#8221; and yield a nice sheen of liquid when peeled, and fresh cod or haddock (hake is fine also) will have wonderfully shiny skin and nice firm flesh. If it&#8217;s already flaky and soft do not buy it, instead sharply reprimand your fishmonger for having the temerity to sell such tat.</p>

 - 4 olives, stones removed, chopped finely<br />

 - 3tsp capers, chopped finely<br />
 - 1/4 onion, minced<br />
<strong>Curry Sauce</strong><br />
 - 1/2onion finely diced<br />
 - 4 cloves garlic, minced<br />
 - 2 tbsp chutney or 1tbsp minced ginger + 1/2 apple, peeled, cored and minced<br />
 - 3tsp curry powder<br />
 - 2 tsp plain flour<br />
 - 1tsp granulated sugar<br />
 - 1/2 tsp cinnamon<br />
 - 6 tbsp ketchup/tomato sauce<br />
 - 1 good pinch kosher salt<br />

- add curry and flour, stir well to combine<br />

- simmer in stock, stirring occasionally, for 20-30 mins or until thick and delicious.</td>
