<p>Since parenthood came into my life, so has weight gain. It hasn&#8217;t been all that bad but I think I weigh a bit more now than I did in the days after I pushed that child out. Why? Because the gym is now a long-distant memory. Since we clearly like to eat, the gym was once my very good friend four or five times a week pre-child. Now, I&#8217;m lucky to even get a long walk to the park. If I still have energy after a day of chasing after a 1 year old, I&#8217;ll may pop in a yoga DVD, but I now realize that &#8220;5 Minute ABS&#8221; only works when you are doing more than just &#8220;5 Minute Abs&#8221;. I <em>refuse </em> to stop eating or drinking wine but I miss those carefree days of hitting the gym whenever I wanted to sweat off my stress and weekend steak and potatoes.</p>
<p>So how does Mariah Carey fit into this post? Well, recently, Mariah <a title="mariah carey post baby" href="http://www.huffingtonpost.com/2011/11/10/mariah-carey-post-baby-body-jenny-craig-photos_n_1085889.html">debuted her &#8220;post baby body&#8221;</a> &#8211; a phrase I&#8217;m kinda getting sick of seeing on magazine covers. Yeah, yeah, she did it through diet and exercise and did gain like a million pounds while on bedrest with her twins but she has a FLAT STOMACH AGAIN! How about <a href="http://www.popeater.com/2011/04/18/miranda-kerr-bikini-photo/">this chick </a>- she did a Vickis Secret bra and panties modeling shoot a few weeks after giving birth. I was still wearing my &#8220;belly band&#8221; at that point.<span id="more-2521"></span></p>
<p>But, it&#8217;s never too late to try and lose a bit of that baby weight, huh? This ceviche is the perfect way to attempt to do so without getting depressed that all you are eating is salad and brown rice. This ceviche is a bit different than the ones you may have had in the past. Normally, ceviche&#8217;s fish/shellfish is &#8220;cooked&#8221; by lime or lemon juice acid that it marinates in. This particular ceviche requires one to actually cook the seafood first. It is inspired by street food we had in Brooklyn several years ago. We have remembered it all this time &#8211; it was the type of NYC street food that is very hard to find these days (one that is probably illegal and delicious). With street food becoming a weird trendy thing, possibly because of the invention of the <a href="http://streetvendor.org/vendys/">Vendy Awards</a> and the infiltration of slick food trucks, it is sometimes hard to find street food that isn&#8217;t overdone or trying too hard. This particular hot summer day, we discovered a woman on her stoop with a little table containing a large, plastic vat, a tupperware filled with avocados and two bottles of hot sauce. For $2.50 we received half a perfectly ripe avocado filled with shrimp ceviche in a spicy tomato sauce. It was served on a white napkin with a plastic fork.  The avocado skin served as it bowl. We happily sat on the neighbors stoop inhaling this amazing snack.</p>

<p>Five years later, we finally got around to trying our hand at the ceviche. After a bit of research, we discovered that this ceviche is closer to an Ecuadorian ceviche which is different from the Peruvian type most are accustomed to. The main difference between the two is 1) a tomato-based marinade with a &#8220;soup like&#8221; consistency 2) most often made using shrimp that is cooked/boiled first and 3) served with popcorn and fried plantains. We played around a bit with our recipe, adding some things that are probably not traditional. For instance, the tomato base of the Ecuadorian ceviche &#8220;sauce&#8221; is often made with ketchup and doesn&#8217;t have olives. We used some Goya tomato sauce and added olives for briny-ness. We also had some baby octopus that needed eating up, so we threw that in there too.</p>
<p>A few weeks of this as a weeknight meal and I may not have a stomach like Mariah or legs like that Victoria&#8217;s Secret model but who cares. It&#8217;s the trying that counts, right?</p>
<div class="recipe"><strong>Ecuodorian-Style Ceviche in Avocado</strong> (serves 4)</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 lb. shrimp with shell on (about 15 to 20)</li>
<li>1/2 lb baby octopus (optional)</li>
<li>1 8oz. can of Goya tomato sauce</li>
<li>juice of 3 to 4 limes</li>
<li>1/4 cup of orange juice</li>
<li>1 teaspoon sugar</li>
<li>1/2 red onion, thinly sliced and then chopped into small pieces</li>
<li>1 cayenne pepper, very thinly sliced (optional)</li>
<li>big handful of cilantro, chopped</li>
<li>1 cup of alcaparrado (or just some pitted spanish green olives) + a bit of the olive brine</li>
<li>2 perfectly ripe avocados (or 1/2 avocado per serving)</li>
</ul>
<p><strong>Recipe:</strong></p>
<ol>
<li>Boil your shrimp with the shells on &#8211; about two to three minutes.  Remove from water and allow to cool.  The take the shells off the shrimp.  Keep whole or cut down the middle.</li>
<li>Meanwhile, add the octopus to the boiling water if using and boil for two to three minutes.  Remove and allow to cool.</li>
<li>In a separate bowl, add the tomato sauce, pepper, onion, cilantro, alcaparrado or olives, lime and orange juice along with the sugar.  Stir and taste.  Add a bit of the olive juice for a hint of saltiness.  Taste for seasoning.  Add more lime juice if you want or even a pinch of garlic powder if you feel it needs that kick.  This sauce is to be to your liking so play around with the ratios till it tastes like you want it!</li>
<li>Add the deshelled shrimp and octopus to the tomato sauce.  Stir.</li>
<li>Cut ripe avocados in half and remove the pit.  Scoop a small bit out from the center of the avocado to allow a bit more room for the ceviche to lay in.  You can top the ceviche with that extra avocado if you like.  Poor the ceviche on top of an avocado half.  Top with a bit more of the cilantro.  Serve with rice to make it a bit more of a meal.  Enjoy!</li>

<p>One finds mulligatawny soup on an Indian restaurant menu the same way one always finds buffalo wings or nachos on a bar menu. It just has to be there &#8211; if it wasn&#8217;t on the menu you just know there&#8217;s something wrong with the place. But how many of you have ever ordered it over the <a href="http://en.wikipedia.org/wiki/Papadum">papadums </a>or <a href="http://www.tasteofindiany.com/web_images/samosa.jpg">samosas </a>to start your meal?  Like many dishes ordered at your local Indian, it can feel like a bit heavy.   This is a good thing if you make this your lunch or your dinner, which is why I absolutely love making batches of this incredibly hearty and extremely inexpensive soup that lasts for many meals. <span id="more-1354"></span></p>
<p>The funny thing is, mulligatawny soup has a kind of shady past.  After doing research, I realized that there is no cut and dry history of the soup.  There are so many variations of mulligatawny, it almost makes sense that it was difficult to pin down its origins. One thing we do know, it&#8217;s not <em>strictly</em> an Indian dish.  It&#8217;s actually based on an Indian dish that was changed into soup to satiate (and placate) the fussy British soldiers during the British Raj (the period between 1858 and 1947 when Britain ruled parts of South Asia/India).</p>
<p>Mulligatawny means &#8220;pepper water&#8221; and is believed to be loosely based on a stew the Brits loved that their <a href="http://en.wikipedia.org/wiki/Tamil_language" target="_blank"><em>Tamil</em></a> servants would often serve.  They &#8220;demanded&#8221; a soup course which, before this time in history, had never been a part of Indian food culture.  The result was a thinned out version of the stew base that they liked so much.  According to research, the British eventually brought the invented soup dish back home where it became a well-loved classic there, but because of its many, many variations, it is hard to know what the original recipe contained.</p>

<p>Some mulligatawny soups contain rice or noodles, some are made vegetarian, but traditionally it should have a meat base (like chicken or mutton).  Some contain cream, others coconut milk or yogurt.  Some add apples for a sour/sweet flavor, others add tomato while some people just dump in some chutney.  Your head could spin with all the recipes out there!</p>
<p>So how did we come up with our recipe?  Well, we went to our main source &#8211; our local Indian.  We absolutely adore their mulligatawny soup and wanted to eat a version as close to theirs as possible. This homemade recipe is relatively close to one we found in a Madhur Jaffrey book, but with a bit of help from our local Indian restaurant.  It can most definitely be made vegetarian or even vegan (!) and the lentils provide a great heartiness. Pair with some naan (store-bought for us) and you&#8217;ve got an amazing lunch or dinner.  Regardless of it&#8217;s history, mulligatawny soup is going to remain a staple in my household.  It&#8217;s too easy to make and too delicious.</p>

<div class="recipe"><strong>MULLIGATAWNY SOUP (Serves 4 to 6)</strong></p>
<ul>
<li>2 onions, chopped</li>
<li>2 stalks of celery, chopped finely</li>
<li>2 carrots, chopped finely</li>
<li>1 15 oz. can of crushed tomatoes</li>
<li>1 1/2 cups of <span style="text-decoration: underline;">red </span>lentils</li>
<li>2 to 3 tablespoon of spice mix (see below &#8211; you&#8217;ll have extra)
<ul>
<li>2 tbsp. ground coriander seed</li>
<li>1 tbsp. ground cumin</li>
<li>1 tbsp. ground black peppercorns</li>
</ul>
</li>
<li>1 inch piece of ginger, peeled and chopped into a few chunks</li>
<li>4 cloves garlic, peeled, chopped into a few chunks</li>
<li>6 to 8 cups of chicken stock (for veggie version use, ahem, vegetable stock)</li>
<li>1 tbsp. tumeric</li>
<li>3 tbsp. curry</li>
<li>1 cinnamon stick</li>
<li>Juice of 1 lemon or lime</li>
<li>2 chicken breasts, boiled (optional if you are keeping this veggie)</li>
<li>Toppings:  dollop of drained plain yogurt, some almond slices, chopped cilantro and sliced green onion)</li>
</ul>
<p><strong><em>What do to:</em></strong></p>
<ol>
<li>Make a garlic/ginger paste by crushing the chunks in a mortar and pestle.  Use some kosher salt to help it grind better.  If you don&#8217;t have a mortar and pestle, chop the ginger and garlic finely with a knife then, using the side of the knife, crush repeatedly to try and squash it all together.</li>
<li>In a big pot, fry your onion, carrot and celery in a bit of oil.  When it gets some color, add your ginger/garlic paste and fry for 30 seconds or so.</li>
<li>Add all your spices (spice blend, tumeric, curry) including the cinnamon stick. Allow to cook for a few moments, constantly stirring.</li>
<li>Add the tomatoes and stir.</li>
<li>Add lentils and six cups of stock.  Stir and lower heat to a simmer. Cover and cook for 40 to 50 minutes, checking to make sure the liquid level isn&#8217;t too low.</li>
<li>While the lentils are cooking, boil some water and add your chicken.  Boil the chicken pieces for about 25 to 35 minutes, depending on the size of the pieces.  Smaller, less time to be cooked. Bigger, more time needed.  When they are done, remove from water and allow to cool. After it cools, remove chicken from bone and either chop up or shred with fingers.</li>
<li>Taste the lentils &#8211; when they are not too hard to the tooth, the soup is ready to be blended.  <strong>FIRST REMOVE THE CINNAMON STICK!!</strong> Using a stick blender (or, if you prefer, a regular blender), puree the soup until completely smooth.  You may want to add more warm chicken stock or water to thin it out.  Sometimes the consistency is too thick so make it to your liking by adding a bit of liquid.</li>
<li>Stir in the lemon or lime juice and some chopped cilantro if you choose.  Add the chicken and stir.</li>
<li>Pour into bowls and top with some chopped almonds, green onion and a dollop of yogurt.  Enjoy with some naan bread warmed in the oven.</li>

<p>There are few things that, when slapped between tortillas and christened with spicy condiments, fail to get me excited. Making it a shame that the vast majority of Mexican restaurants near us have such a limited spectrum of taco fillings. Not that I don&#8217;t enjoy carnitas, carne asada, fish or chicken tacos, I very definitely do, but that there is something of a tyranny inherent in this four-point agenda. <span id="more-725"></span></p>
<p>Recently, after our <a href="http://www.weareneverfull.com/mercado-del-puerto-montevideothe-meat-odyssey-continues/" target="_blank">meaty dust-up with the Uruguyuan-style <em>tablita parillada</em></a>, we found ourselves with a surfeit of grilled sweetbreads (aka mollejas in Spanish, aka thymus glands in biology), and were looking for creative ways to use this most succulent of leftovers. Ever the slayers of convention, we sought to break this taco-based tyranny, and gently reheated our sweetbreads combining them with a crunchy, tangy salsa of radish, roasted corn and grape tomato, all wrapped in a blue corn tortilla for a dramatic finish.</p>

<p>In this process, we learned that throughout the South-West USA and northern Mexico, taco stands offering sweetbreads (as well as other tasty fillings including tongue and tripe) are so common you just about fall over them at every corner. All of which made us feel slightly less original in our preparation, but no less enthusiastic about its merits. Indeed, it was reassuring to know that places still exist in this condensed and standardized world where you can be openly and brazenly glandular should the feeling so move you.</p>

<strong>Ingredients:</strong></p>
<ul>
<li><a href="http://www.weareneverfull.com/mercado-del-puerto-montevideothe-meat-odyssey-continues/" target="_blank">8oz cleaned and poached sweetbreads</a></li>
<li>4-6 corn tortillas</li>
<li>4 large red radishes, finely sliced into rings</li>
<li>1/2 medium red onion</li>
<li>6oz grape tomatoes, halved</li>
<li>1 ear yellow corn (sweet corn),boiled and roasted/grilled)</li>
<li>3tbsp cilantro(coriander leaf), finely chopped</li>
<li>juice of 1-2 limes</li>
<li>salt</li>
<li>black pepper</li>
<li>3tbsp vegetable oil</li>
</ul>
<p><strong>Recipe:</strong></p>
<ol>
<li>Pre-heat flat-top, griddle or heavy skillet to medium-high</li>
<li>Grill corn cob on said hot surface until browned (but not blackened) on all sides. Allow corn to cool.</li>
<li>When fully cooled, slice off kernels and, in a bowl, combine with radish, onion, tomato, cilantro and lime juice.</li>
<li>Allow salsa to improve for at least half an hour or as long as overnight. Season with salt and pepper to taste.</li>
<li><a href="http://www.weareneverfull.com/mercado-del-puerto-montevideothe-meat-odyssey-continues/">Gently grill/griddle your poached sweetbreads until nicely golden-brown on all sides. (10-12minutes)</a>. Squeeze lime juice over them and set aside.</li>
<li>In a skillet or flat-top at medium high heat, add a teaspoon of oil and quickly soften enough tortillas (2-4) for first course (you&#8217;ll want seconds). Do not allow tortillas to &#8220;fry&#8221;, only to puff up a little and become pliable.</li>
<li>Combine your sweetbreads, salsa and tortillas to make your tacos. Other possible condiments include guacamole, crema (sour cream), hot sauce, pickled onions, pickled carrots, sliced cabbage, pico de gallo, <a href="http://www.weareneverfull.com/taco-bell-i-think-not-how-good-an-authentic-carne-asada-taco-can-make-you-feel/">rajas</a>, etc..</li>
<li>Enjoy with a cold beer.</li>

<p>Picture this, if you will: A warm, humid day in Argentina&#8217;s early autumn; the last rays of sun slanting sharply through the browning leaves of mature plane trees; myriad dog-walkers rustling quietly by in the litter of those already fallen. In the lee of a giant ficus planted for sidewalk shade, two travelers recline in the canvas-backed chairs of a cafe, unwinding the combined corporeal kinks of a 10 hour overnight flight and a 6 hour stroll around Buenos Aires. As they sit, calm descends over our road-weary protagonists &#8211; of the kind unknown and almost unfathomable in their highly caffeinated daily lives up North, yes, a beautiful serenity indeed, interrupted only by a raging thirst. <span id="more-518"></span></p>
<p>To repeat the lunchtime libation of a world-class Malbec/Syrah blend seems somehow tyrannous to our relaxed travelers, and the option of the Argentine national drink, the Fernet-Coca, somehow dischordant with the peaceful ambiance. Instead, the distinctly un-Argentine, yet surely appropriate, and broadly contextual, selection of a pair of chilled pisco sours has great appeal. </p>

<p>Made from a tangy combination of lemon or lime juice, pisco, simple syrup, regional bitters, and egg whites, the pisco sour is the national drink of both Peru and Chile, and its origins lie in 16th century Peru, where grapes first planted by Spanish colonialists were distilled into brandy because the Crown, seeking to protect it&#8217;s export trade, banned local wine production.</p>
<p>Although it shares its name with a Peruvian coastal town &#8211; a title derived from the Quechua word &#8220;pisqu&#8221;, meaning a variety of &#8220;little bird&#8221; native to the towns&#8217; surrounding region of Ica &#8211; it wasn&#8217;t until the 18th century that brandy from Pisco, &#8211; having been known previously as simply aguardiente (firewater) or orujo, became synonymous with its home port, as sailors transporting it between the colonies and Spain began to refer to it in that way.</p>
<p>Indeed, it was among sailors and other &#8220;ruffians&#8221; well-known for being partial to strong liquor that pisco first gained popularity, with the loftier classes generally shunning it as the drink of the unstable and unsavory. And, even when the ban on wine exporting from the colonies was repealed, this down-at-heel reputation did not stop it far exceeding wine in quantity sold.</p>
<p>Today, pisco is still widely exported from both Peru and Chile, and is drunk by all classes both within those countries and across the world. In it&#8217;s native lands it is often sipped neat, and aged varieties &#8211; in the same way as aged brandies the world over &#8211; command high prices due to their complexity and mellow flavors. The &#8220;Quebranta&#8221; on the front of our bottle of pisco refers to the typical Peruvian grape varietal it&#8217;s made from, which is but one of many used in the distillation of pisco. [For more on these grape varieties and distillation techniques click <a title="El Pisco dot blogspot" href="http://elpisco.blogspot.com/" target="_blank">here</a>.] However, the bulk of exported pisco is clear, aged for only the minimum three months (usually in stainless steel), and destined for the cocktail shaker.</p>

<p>The most famous of these cocktails is, of course, the pisco sour. As with many mixed drinks, it&#8217;s unclear exactly where and when it was first &#8220;invented&#8221;, as records of drinks named &#8220;punche&#8221; containing pisco diluted with lemon or lime juice date from the 18th century, and at the turn of the 20th century the Bank Exchange Bar in San Francisco became famous for its Pisco punch which contained pisco, lemon and pineapple juices. The consensus is though, that in the 1870s an English sailor by the name of Eliot Stubb opened a bar in the Peruvian city of Iquique where he began to experiment with a Latin American version of his favorite cocktail the, then very new, whiskey sour. Quite why he included the egg white in his recipe has been lost in the hazy annals of alcoholic history, but as these pictures amply demonstrate, it gives the otherwise rather ordinary-looking drink a real sense of drama.</p>
<p>Now, rejoining our two travelers, who, having been served, now sip contentedly on their pisco sours over frothy upper-lips as the sun, as if sharing their relaxed ambiance, slips lazily below the horizon giving-up a magnificently pink dusk sky&#8230;</p>
<p><em>Why not make yourself a couple of pisco sours this evening and raise a toast to (arguably) the most famous of Argentines, Eva Peron, aka Evita, who would be 90 years old today.</em></p>
<div class="recipe"><em><strong>Pisco Sours </strong></em><em>(makes 2)</em><br />
<strong>Ingredients</strong></p>
<ul>
<li>4fl oz pisco</li>
<li>2fl oz lemon juice (lime juice can also be used, we just prefer lemon)</li>
<li>4fl oz simple syrup (equal parts water and sugar)
<li>
<li>2 egg whites</li>
<li>2 dashes bitters (Amargo bitters are typical, but Angostura are perfectly fine too)</li>
</ul>
<p><strong>Recipe</strong></p>
<ol>
<li>In a cocktail shaker, combine all ingredients except bitters.</li>
<li>Add plenty of ice</li>
<li>Shake like crazy</li>
<li>Pour through a strainer into an &#8220;old-fashioned&#8221; glass (traditional), or a champagne flute (bourgoie affectation)</li>
<li>Top with the foam</li>
<li>Allow at least 3-4 minutes to settle (i.e. for drink mixture to clear)</li>
<li>Hit foam with a dash of bitters</li>
<li>Sip and relax, preferably in pseudo-tropical warmth&#8230;</li>
</ol>

<p>When you think of Brazil what do you think of? Is it the lazy sway of coconut palms, golden beaches, beautiful, bronzed people, a back-drop of Sugar Loaf Mountain, and soundtrack of relaxing <em>bossa nova</em>? Is it a throbbing samba rhythm, huge, garish paper-mache heads, and crowds of people dancing at carnival? Is it the magnificent graceful style of Brazilian soccer players, shimmying around in their famous yellow jerseys? Is it swampy, vibrant, old-growth rainforest echoing with bird and monkey calls, and the slow, muddy peregrinations of the worlds&#8217; longest river? Or is it, perhaps, scenes of horrific murders and kidnappings<em>, </em>grinding poverty and deprivation?</p>
<p>It could well be all of the above. Brazil is the world&#8217;s fifth largest country in geographical area and in population, and has staggering diversity in environment, culture, ethnicity, and geography, as well as staggering economic disparity. In fact, some would argue that perhaps the only things that all Brazilians can agree on are the national soccer team and cachaça (pronounced, more or less, <em>Ka-shass-a</em>).</p>

<p>The former represents the country more famously than perhaps any thing else, as Brazil has won the World Cup 5 times - more than any other nation. But, even more famous than their success is their style of play. The free-flowing, wonderfully skillful, attacking game has endeared <em>a Seleçåo</em> not just to their own people but to millions around the world too. The latter, cachaça, the national drink of Brazil, is less widely known to non-Brazilians, but it&#8217;s fame too, is increasing through the successful export of the most popular drink made with it, the <em>caipirinha</em>.</p>
<p>And, for me, it&#8217;s the style of the drink that I find so attractive. The rawness of the cachaça, the sharp tang of lime, the sweetness of the sugar, the muddling it all together &#8211; all these different flavors and textures speak to me of a vibrant, diverse culture that retains a sharp bite. Meaning (literally) &#8220;little hillbilly&#8221; (the diminutive form of <em>caipira</em>, or redneck), the <em>caipirinha</em> is Brazil&#8217;s most popular cocktail, and is drunk on virtually every occasion in bars, restaurants, and in the home. Of course, there are several other ways to enjoy cachaça, which we&#8217;ll get on to shortly.</p>
<p><strong><img border="0" align="right" width="240" src="http://farm4.static.flickr.com/3235/2921161265_d951757a66_m.jpg" height="207" />A Little History</strong></p>
<p>But, before that, let&#8217;s learn more about cachaça itself. Basically, it&#8217;s a spirit distilled from the cane sugar for which &#8220;The Brazils&#8221; were primary producers of during Portuguese colonialism, being first produced in the town of Sao Vicente in the state of Minas Gerais (north-west of Rio de Janeiro) in the mid-1500s. The name is derived from the word <em>cagaça, </em>a kind of sour &#8216;beer&#8217; made from fermented cane juice, first brewed by African slaves brought to work on Brazil&#8217;s plantations.</p>
<p>By the seventeenth century, its popularity had grown so much and there were so many distilleries in Brazil, that cachaça was officially banned in order that it not compete with imported Portuguese <em>bagaceira</em>, or grappa. However, in 1755, following the earthquake and tsunami that devastated Lisbon, the Portuguese decided to legalise it and tax it, and in fact, much of Lisbon was rebuilt with this cachaça tax.</p>
<p>While cachaça was widely popular, it was not considered to be refined enough for consumption by any but the lowest classes, including slaves, peasants and urban working class. However, these days that has changed dramatically and all classes of Brazilian society consume cachaça with a passion some might call reckless abandon. Indeed, the average annual consumption in Brazil is around <u>8 liters</u>. That&#8217;s 8 liters of forty head-splitting percent alcohol. Of course, there are different grades of cachaca, in the same way that there are better or worse cognacs or whiskeys, and while there are several large producers (Pitu, Cachaça 51) there are many hundreds of artisanal producers also making all kinds of interesting versions that are either mixed with flavorful botanics or aged in barrels made from exotic tropical woods. Much of the former kind is drunk as a <em>caipirinha</em> or one of several other mixed drinks, whereas the artisanal versions are sipped in the same was as scotch or cognac.</p>

<p><strong>Heady Concoctions</strong></p>
<p>Other than the hugely popular <em>caipirinha</em>, other liver-busting cocktails can also be made with cachaça, including: the <em>bombeirinho</em> combining it with red gooseberry syrup in a popular beverage; the <em>caipifruta</em> mixes cachaça with muddled fresh fruits, condensed milk and crushed ice into a refreshing milkshake-type cocktail; and the <em>capeta</em> or <em>capetåo</em>, meaning &#8220;devil&#8221;, which is a mix of cachaça, vodka, grape or strawberry juice, cinnamon, red wine and sugar, and is usually served hot. The fumes coming of this latter drink must be intense. The name tells you everything you need to know, I guess.</p>

<p><strong>What does cachaça taste like?</strong></p>
<p>Well, since it&#8217;s more or less a colorless rum, it tastes like what it is, and even then it doesn&#8217;t really have a massive amount of it&#8217;s own flavor. Like vodka in that respect really, although perhaps a little sweeter. However, the aged varieties are allegedly as good as a fine brandy and can be enjoyed as a great digestivo after a meal. That said, artisanal cachaça is hard to find in the United States so you&#8217;re much more likely to only be able to find the mass-produced brands mentioned above. Do not despair, as these are pretty good in their own right, and given that they are best drunk diluted with lots of lime juice, sugar and, occasionally, soda water, you don&#8217;t need to worry about the taste too much. And, if you&#8217;re not looking for a drink that&#8217;s as cocktail-ish as a caipirinha, then I would also encourage you to try the confusingly-named <em>rabo de </em>galo, (literally tail of cock), which despite its name is just a mixture or equal parts of cachaça and sweet vermouth. This feels like more of an aperitivo and a little less &#8220;hectic&#8221;.  </p>
<p>Even the name cachaça is exotic and cool-sounding &#8211; just rolling it around in your mouth, like most words in Brazilian Portuguese - it sounds soothing and somehow sexy.  Drinking a <em>caipirinha</em> is a similar experience, and they are as much fun to make and pronounce as they are to drink! <em>Saude</em>!</p>

But how many take the time to cook them really, really well?  It actually doesn’t take much longer to make them more authentic.<span>  </span>I&#8217;m not being a food snob here, I&#8217;m just talking from experience.  I&#8217;ve made my fare share of ground-beef tacos or over-cooked cubes-of-steak tacos.  But since we&#8217;ve been united with, made out and fallen in love with our seasoned, heavy-duty, cast-iron skillet, we&#8217;ll never be the same.  We&#8217;ve fallen under its spell and will never return to the old way of cooking steak inside the home. Of course, an outside grill is the second best way to cook a steak!</p>

<p>Since we&#8217;re always on the search for the traditional and authentic, we really wanted to do the steak taco justice.  In Mexico street food is rampant, fresh and delicious. You won&#8217;t see <em>Old El Paso </em>pre-made, fried taco shells, pre-packaged &#8220;taco seasoning&#8221; or over-salted ground beef plopped in the middle of the tortilla.  The meat, veggies or fish and toppings are fresh and the food is cheap. Carne asada (grilled steak) is one of the most popular dishes of many parts of Northern Mexico. It’s synonymous with barbecue &#8211; the verb, not the noun version as is often used in America to describe the sweet sauce brushed on various bits of meat and poultry.   Even more interesting is that &#8220;<em>a carne asada&#8221;</em> or <em>&#8220;una carne asada&#8221; </em>in Mexico also refers to the party/social gathering/event surrounding the making of the actual meal. I think that&#8217;s pretty kick-ass.  I feel like Mexicans always find a good reason to party!  They&#8217;ve got tequila AND <em>&#8216;una carne asada&#8217;</em>!</p>
<p>You may also be interested to know that tacos have been around for a long time.  No, I mean a <em>really</em> long time.  Like, longer than a Britney Spears marriage (cheap shot and bad joke, I know).  A Spanish soldier named Bernal Diaz del Castillo wrote about the taco in the 1500&#8242;s but he&#8217;s not the inventor of the delicious, utensil-less, portable meal.  Anthropologists discovered evidence that those who lived in the lake region of the Valley of Mexico made tacos filled with fish (hey, they lived by a lake).  In other parts of Mexico, tacos were filled with live insects, locusts and/or snails. Fillings were determined by what was local and available, same as many other culture’s meals, except America, of course.  Today, this still holds true.  Although you may not find many taco stands selling insect or locust tacos, fillings will be different depending on the geographical region you are eating them in.</p>
<p>The first taco recipe found in America comes from a California cookbook published in 1914 called &#8220;<em>California-Mexican Spanish Cook Book</em>&#8220;.  The recipe went as follows:</p>
<blockquote><p><em>The tacos are made by putting chopped cooked beef and chili sauce in tortilla made of meal and flour; folded, edges sealed together with egg; fried in deep fat, chile sauce served over it.</em></p></blockquote>
<p>Very different from what the Mexicans and Americans look at as tacos today. The above quote seems more like a tortilla empanada or chimichanga? A real, traditional carne asada taco will always be pretty bland and never spicy. The meat, usually finely cut flank or skirt steak, <a href="http://www.flickr.com/photos/53264786@N00/2382692835/" title="Perfect Steak for Tacos by SeppySills, on Flickr"></a><img src="http://farm3.static.flickr.com/2326/2382692835_10d6740e5d_m.jpg" alt="Perfect Steak for Tacos" align="right" border="0" height="180" width="240" />should be seasoned only with some salt because the delicious flavor of the beef is what is to be tasted. No cumin, no chili powder – nothing but salt. The spiciness and other flavor comes from the various toppings you can put on your carne asada.  Salsas, chopped white onion and cilantro are just a few traditional toppings. This dish is also traditionally made with corn tortillas, although we (ok, I) forgot to pick some up on my grocery trip and I couldn’t be arsed going back to the store.</p>
<p>For our toppings we decided to make another popular Mexican condiment, <strong><em>rajas. </em></strong>As the great Rick Bayless puts it, rajas is “a true-blooded Mexican classic”.  The word rajas is spanish for strips and in Mexico that means strips of chile. In parts of central and northen Mexico poblanos grow everywhere, so rajas will feature the poblano chile.  Again, just like with the fillings of tacos being determined by the geographic location, so is the rajas topping. Poblano peppers are dark green in color and don’t have much of a spiciness to them. In parts of California these peppers are called “passillas” and in Mexico, “chile verde”. You may have heard of ancho chiles, well these are poblano’s in their dried form. The rajas are basically made of onion, roasted poblano, some garlic and herbs. Ok, now on to the recipe!</p>

<li style="margin: 0in 0in 0pt; color: #333333; line-height: 14.4pt" class="MsoNormal"><font color="#000000"><span style="font-family: Georgia"><font size="3">Now, make the rajas by heating up a skillet till red hot.<span>  </span>Add some oil and first saute your onions and yellow pepper (if using).<span>  </span>Allow to sauté for 4 to 5 minutes and then add the garlic.<span>  </span>Allow to sauté for another minute or two.<span>  </span>Finally, add the roasted poblano pepper and sauté for 30 seconds.<span>  </span>Remove all to a plate.<o:p></o:p></font></span></font></li>
<li style="margin: 0in 0in 0pt; color: #333333; line-height: 14.4pt" class="MsoNormal"><font color="#000000"><span style="font-family: Georgia"><font size="3">In the same skillet, not adding any extra oil, add your steak.<span>  </span>This process should be QUICK.<span>  </span>We like our steak really pink inside – medium rare.<span>  </span>For a thin piece of steak, this will mean cooking each side for about 3 to 4 minutes per side.<span>  </span>If worse comes to worse, UNDERCOOK it and then make a little slice in it. You can always cook it a bit more, but never take back the cooking time on an overcooked piece of steak.<o:p></o:p></font></span></font></li>
<li style="margin: 0in 0in 0pt; color: #333333; line-height: 14.4pt" class="MsoNormal"><font color="#000000"><span style="font-family: Georgia"><font size="3">Remove steak and allow to rest for 5 minutes.<span>  </span>Meanwhile, heat up your tortillas.<span>  </span>If using flour, heat in dry skillet for a few moments on each side and wrap in a towel. Or, microwave for 20 seconds wrapped in a towel. If using corn tortillas, you should fry them a bit in some oil in the skillet. You don’t want them crispy, just pliable and cooked.<o:p></o:p></font></span></font></li>

<p>Almost every time we eat out at one of our <a href="http://weareneverfull.com/little-chickens-for-little-money/" target="_blank">favorite local Mexican cheap-eats</a>, it is difficult for me to resist the crunchy and tasty sopes. These traditional Mexican dish involves fried masa cakes and can be topped with a variety of things &#8211; chorizo, beef, chicken, pork, veggies or beans. Some are made small as a sort of appetizer or first course, we make them larger for a main meal (about 6 inches in diameter). If you kind of &#8216;pinch&#8217; the sides of the masa, it helps some of your toppings stay on the sopes. I really get excited when I know we&#8217;re going to make a weeknight meal out of this because, yes, it involves a bit of frying, and we all know how good anything fried tastes, but the combo of flavors and the layering of flavors is really amazing.</p>
<p>One sauce, or salsa, we make often to top our enchiladas, burritos, fajitas and sopes is a delicious tomatillo-avocado salsa. For some of our readers, it may be difficult to find tomatillos, the small green, &#8216;tomato-like&#8217; fruit with a brown husk surrounding it. They are <em>not</em> green tomatoes, though. Research finds that these beauties never took hold in Europe and the beloved red tomato was taken to Italy where it reigns supreme today. These sweet treasures are used in a lot of Latin American cooking. If you can get your hands on them, I highly recommend giving them a try. Make sure you husk and wash the stickiness off them before you use them!</p>
<p>Please don&#8217;t be turned off by what seems like alot of work to make this meal. If you&#8217;ve ever made burritos or fajitas, you can make sopes! If you don&#8217;t have tomatillos or can not get them, don&#8217;t worry, just top with your favorite salsa!</p>
<p><u><strong>SHREDDED CHICKEN SOPES WITH TOMATILLO-AVOCADO SALSA</strong></u></p>
<p>(serves 2 for 2 big entree sized sopes)</p>
<p><strong><em>Ingredients</em></strong></p>
<ul>
<li>2 cups masa harina</li>
<li>1 cup warm water (may need less)</li>
<li>pinch of salt</li>
<li>vegetable or corn oil or frying</li>
<li>1 large chicken breast or 2 medium sized ones (with or without skin &#8211; just take skin off after you boil)</li>
<li>1 onion, sliced in 1/2&#8221; half moons</li>
<li>1 green or red pepper, cut in half and sliced into 1/2&#8221; slices</li>
<li>1 minced clove of garlic</li>
<li>juice of 1 lime</li>
<li>2 scallions, sliced</li>
<li>cilantro</li>
<li>1 teaspoon cumin</li>
<li>1 teaspoon chipotle powder</li>
<li>salt</li>
<li>1-2 cups of our <a href="http://weareneverfull.com/a-bean-dip-that-poisoned-no-one-at-all/" target="_blank"><strong>beans with chorizo and cumin</strong></a> (you can make these without the chorizo as well)</li>
<li>sour cream as a topping</li>
<li>cojita, shredded cheddar or monterey jack cheese as a topping</li>
<li>tomatillo-avocado salsa for topping (<em>SEE BELOW</em>)</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Boil some water and cook your chicken breasts for 12-15 minutes or until it is not pink inside.  How long you boil it for will depend on how big the piece is.</li>
<li>Make your tomatillo-avocado salsa (<em>see below</em>).</li>
<li>Start making your <a href="http://www.weareneverfull.com/a-bean-dip-that-poisoned-no-one-at-all/" target="_blank">beans w/ chorizo and cumin </a>if you choose to.</li>
<li>In a bowl, add your masa. a pinch of salt and the water. You want it to be thick, not like pancake batter.   If you need to add water, add more. If you feel like it&#8217;s too thin, add more masa.  You will want to shape them and fry them about the same time (I&#8217;ve found that the dried masa sometimes doesn&#8217;t stick together as well as I&#8217;d like it to).  Reserve this in the bowl until you&#8217;re ready to fry your cakes.</li>
<li>When your chicken breasts are cooked, allow to cool and then shred using your hands or a fork.  Keep handy so you can add them at the end of Step 5.</li>
<li>In a pan on medium, saute your onions and pepper in some olive oil.  Add your minced garlic.  After 4 minutes or so, add your shredded chicken breasts and your spices (cumin, chipotle powder and some salt if necessary).  Add the juice of half a lime and stir.  Allow to warm the chicken back up, then turn on low to keep warm.</li>
<li>Now, it&#8217;s time to fry your sopes.  Take a lump of masa/water mixture and push it down so it&#8217;s about 1&#8221;-1 1/2&#8221; thick in a circular shape. It does NOT have to be perfect.  If you can pinch the sides of it up a bit, this could help your topping from moving.  Many times I do not do this, so don&#8217;t worry if you just have a disc-like masa cake. Usually mine end up being anywhere between 4&#8243; to 6&#8243; in diameter.</li>
<li>Heat your oil up so it&#8217;s in frying-mode, making sure the oil level is about 1&#8221; to 2&#8221; deep.  When oil is hot, using a spatula, slowly slide your sopes into the oil.  After 1 1/2 minutes check it to see if you can turn. You want them to be a golden color, not very dark.  They get very cruchy even if they do not look that brown.</li>
<li>Remove from oil and allow to drain on paper towels.</li>
<li>Now it&#8217;s time to build!  On top your your sopes, add a layer of your beans, then a layer of your shredded chicken/onions/peppers mixture and a bit of shredded cheese. Top with your tomatillo salsa, a small dollop of sour cream, a squeeze more of lime on top and scatter some sliced scallions! ENJOY!!</li>

<li>1 tablespoon of sour cream</li>
<li>1/2 &#8211; 1 jalapeno (if you want it spicy), minced</li>

<li>food processor or blender</li>
</ul>

<li>Preheat your oven to 457 degrees.  Husk, de-stem and wash your tomatillos. Roast your tomatillos on a baking sheet for 10 minutes whole.  They will look a bit brown and will be very juicy.</li>
<li>In a blender or food processor, add all the rest of your ingredients including the roasted tomatillos. Puree until smooth.  Put in a bowl and into the refridgerator to cool down. See, so easy!!</li>

			<content:encoded><![CDATA[<p>It is widely-known that one of the meanest, yet most effective, ways of taking revenge on someone for an injustice is by poisoning them. Throughout history countless numbers of important and unimportant people have been killed with poison. So great was the fear of being poisoned that the kings and queens of Great Britain employed &#8220;beefeaters&#8221; to taste their food for them in case it had been tampered with. Indeed, even today poisoning continues &#8211; only last year there was a famous case of a Russian journalist having been fed a radioactive substance at a sushi restaurant in London which killed him a few days later.</p>
<p>I bring this subject up, not to highlight again that we had badly upset stomachs during our trip to England, <b><a target="_blank" href="http://www.weareneverfull.com/bloody-delicious-time-in-england-a-recap/">as my wife discussed this at extensive length below</a></b>, but rather as a roundabout kind of way of introducing an anecdote, which in turn introduces a recipe. You see, at my office we are made/encouraged to bring food to our Christmas party (why this is the case is quite another story altogether), and last year I brought along a black bean dip. This bean dip was a great success with even the president of the company telling me how good he thought it was. Among the other admirers was my boss at the time, who I had never seen eye to eye with. (Subsequently, he has left the company but I should say that it had nothing to do with my bean dip.) But, in telling me how much he liked it (about the only thing I&#8217;d done until that point that he had liked) he asked me whether it contained any meat as he was a strict vegetarian and couldn&#8217;t stand to eat any flesh. Smiling, I reassured him that it contained no meat or meat products of any kind and that he should go ahead and eat all he could. I took great joy in the, admittedly very petty, trick I had played on him as he tucked in and scraped the bowl clean.</p>
<p>My bean dip, of course, contains chorizo and ham or chicken stock, and half of the joy of watching my boss eat the dip was the seeing him wolf down small cubes of chorizo without so much as a pause to think about why a bean dip should contain something reddish-brown, chewy, smoky and most definitely porky in taste. The advantage of having chorizo in the beans though, is that it provides the porky flavor that gives the often plain tasting bean something to shout about.</p>
<p>So, if you like porky, cumin flavored black beans (and this recipe works just as well for pinto and red beans providing you give them a quick mash at the end) hot or cold, as a side dish or a dip, then check out the recipe below. It goes especially well with the <b><a href="http://www.weareneverfull.com/amazingly-an-actual-original-pork-chop-recipe/">pork chops with lime and olives</a></b>, but only really if you substitute the yucca for rice, otherwise it can get a bit thick on your palate.  Otherwise, this side dish is great with other Latino-inspired dishes.  We use it often as a side to soft tacos, burritos and <b><a href="http://www.weareneverfull.com/shredded-chicken-sopes-with-tomatillo-avocado-salsa/">shredded chicken sopes</a></b>.  Get creative.</p>

<p><strong><em>Black, Red or Pinto Beans with Chorizo and Cumin</em></strong></p>
<p>Ingredients:</p>
<ul>
<li>1/2 onion, diced roughly</li>
<li>3-5 cloves garlic, roughly chopped</li>
<li>1/2 long hot chili pepper (or other hot pepper), chopped finely (optional)</li>
<li>2 medium chorizo links (spanish-style, not mexican), diced small</li>
<li>1 can black beans (or pinto or red beans), drained</li>
<li>1 pint ham or chicken stock</li>
<li>2 tsp ground cumin</li>
<li>1 tsp ground coriander</li>
<li>2 tbsp chopped cilantro</li>
<li>1 tbsp lime juice</li>
<li>salt and pepper to taste</li>
<li>1 tbsp olive oil</li>
</ul>
<p>Recipe:</p>
<ul>
<li>Saute onions until softened. Add chorizo and allow to release its delicious orange fat.</li>
<li>Add garlic and hot pepper and allow to saute.</li>
<li>Throw in beans and allow flavors to mix before adding in dry spices. Stir.</li>
<li>Add roughly half the stock and turn heat to medium. Simmer beans for about 20-25 mins and adding more stock whenever you can see the beans.</li>
<li>At about the twenty minute mark, taste beans and if soft, you&#8217;re ready. If still a bit chewy, cook until soft.</li>
<li>Add chopped cilantro and lime juice.</li>
<li>Mash beans a bit if red or pinto, but not if black.</li>
<li>Correct seasoning and serve.</li>

One last question, did you ever give the same restaurant a &#8220;second <em>last</em> chance&#8221; by ordering takeout and then hating them 100 times more because your takeout took 1 1/2 hours to arrive? Well I answered &#8220;yes&#8221; to every one of these questions which is why I will never eat Thai food again around my way &#8211; <strong><u><font color="#ff0000">I will NEVER eat at Mango Thai in Park Slope, Brooklyn EVER again.</font></u></strong></p>
<p>Since I&#8217;m asking questions, have you ever been hungover (or just REALLY hungry) and wanting that food you ordered to come so badly you stare at the minutes ticking away on your clock?  Well this is what happened to me &#8211; catch me hungover and, worse yet, hungry, well, let&#8217;s just say beware.  But when you promise me my food within forty five minutes and you take over an hour to arrive with it (cold, mind you), well then you&#8217;re blackballed off my restaurant list for life!</p>
<p>Months later I realized how badly I was craving Thai but I <u>REFUSED</u> to go back to Mango to fulfill my craving.  I decided to create my own dish and here&#8217;s what I came out with. It&#8217;s my own recipe and it really turned out great.  The rice side is an adaption of a Delia Smith recipe.  This dish that takes a bit of prep time, but once you get it into the pressure cooker/slow cooker, you can just sit back and relax.  Make some extra for leftovers the next day &#8211; it really improves the next day. </p>
<p><strong><u>LEMONGRASS BEEF SHORTRIBS WITH THAI-INSPIRED COCONUT RICE </u></strong></p>
<p><strong><em>For Shortribs:</em></strong></p>
<ul>
<li>2 lb beef shortribs</li>
<li>1 stalk lemongrass, outer leaves removed, chopped into 1-inch pieces and bruised with back of knife &#8211; reserve bottom 2 inches of the lemongrass (slice this in half)</li>
<li>1 large onion, chopped</li>
<li>4 cloves garlic</li>
<li>6 cilantro stalks/leaves</li>
<li>1 teaspoon black peppercorns</li>
<li>5 cloves</li>
<li>1/2 inch piece of cinnamon stick</li>
<li>1 2-inch knob of fresh ginger, skin trimmed off</li>
<li>1 lime</li>
<li>1 tbsp fish sauce</li>
<li>1 hot chile pepper (whatever you like)</li>
<li>2-3 cups of beef or chicken stock</li>
<li>cheesecloth</li>
<li>6 mushrooms, thickly sliced (Optional)</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>Season short ribs with some salt and pepper.</li>
<li>In cheesecloth, add top part of lemongrass (remember to cut into small pieces and bruise), cloves, cinnamon stick and black peppercorns.  Tie to secure with kitchen twine.</li>
<li>Heat up your pressure cooker on medium. Saute your chopped onion.</li>
<li>In a food processor, chop your garlic, ginger, cilantro (stems and all), reserved bottom 2 inches of lemongrass and hot pepper.  Add a bit of olive oil to help chop it more.</li>
<li>Add the garlic/ginger/cilantro/pepper mixture to the pressure cooker.  Saute for another few minutes. Remove onions and garlic mixture and reserve on side.</li>
<li>Add a bit of olive oil back to the pressure cooker.  Add the meat and brown on all sides.</li>
<li>When meat has browned, add a small bit of hot stock and pick up the brown bits from the bottom of the pan.  When this is done, add back your onion and garlic/ginger/cilantro/pepper mixture and add enough stock to almost cover all your meat.  Give this all a bit of a stir to get the veggies well distributed in the stock.</li>
<li>Add the optional chopped mushroom and throw the spices in the cheesecloth in (make sure it&#8217;s somewhat submerged in the liquid).  Put lid on pressure cooker and cook as usual &#8211; 30-35 minutes.</li>
<li>When finished, remove meat on side and add the creamy coconut milk that rises to the top of a newly opened can (it&#8217;s much thicker than the watery-coconut milk below).  All the sauce to reduce on medium for 10 minutes.</li>
</ol>
<p><strong><em>For the rice:</em></strong></p>
<ul>
<li>1 cup of basmati rice</li>
<li>1 can of coconut milk + some boiling H2O</li>
<li>3 cloves garlic</li>
<li>1 inch knob of fresh ginger</li>
<li>1 hot chile pepper</li>
<li>4 stalks of cilantro</li>
<li>1 shallot, minced finely</li>
<li>1 stalk lemongrass, outer leaves removed, chopped into 1-inch pieces and bruised with back of knife &#8211; reserve bottom 2 inches of the lemongrass (slice this in half)</li>
<li>5 cloves</li>
<li>1 cinnamon stick, broken in half</li>
<li>zest from one lime</li>
<li>cheesecloth</li>
<li>2 teaspoon salt</li>
<li>Sliced scallions for garnish</li>
</ul>
<p><strong><em>What to do:</em></strong></p>
<ol>
<li>In a food processor, finely chop (together) garlic, ginger, cilantro stalks and pepper.  Reserve.</li>
<li>In a piece of cheesecloth, put the cloves, cinnamon stick, some lemongrass pieces, black peppercorns and 1/2 of lime.  Secure with kitchen string.</li>
<li>Saute the shallot in some olive oil.</li>
<li>After about 1 minute, add the garlic mixture and saute for a minute.</li>
<li>Add basmati rice and toast for 30 seconds. Stir.</li>
<li>Add one can of coconut milk and the salt to the rice.  Add enough hot water so the line of liquid comes up to the width of 2 fingers <em><u>above</u> </em>the line of rice <strong>(</strong><em><strong>NOTE</strong>: Make the peace sign, then put those two fingers together. The width of the pointer and middle finger together should be used as your &#8216;ruler&#8217; when pouring the liquid into your rice.  This method will always make the most perfect rice &#8211; thank you Daisy Martinez!!). </em>Stir the rice, put the lid on, bring it to a boil, then lower the heat to a simmer (still with lid on &#8211; you can peek to see if it&#8217;s boiling/simmering) for 10 minutes.  After 10 minutes, turn heat to low and allow to cook for an additional 10 minutes &#8211; do not take lid off. After this, turn the heat off &#8211; <strong>do not lift the lid</strong> &#8211; and allow to sit for another 10 minutes to steam.</li>
<li>When it&#8217;s finished steaming, take off lid, fluff rice with a fork. Add the lime zest, the squeeze of half a lime and check for any additional seasoning.  Top with some scallions and enjoy!</li>

We decided to make it at home and, with an adaption of 4 or 5 recipes blended into one, we&#8217;ve come up with our version of this spicy, warming soup. It&#8217;s pretty healthy and hearty too. We add extra stuff to give it a bit more body than it is traditionally. I like adding some of the topping garnish on the bottom because they go a bit soft and make for an interesting texture combined with the crisp toppings you put at the end. Also, this soup takes no time at all. From start to finish, there&#8217;s no reason it should not be done in 45 minutes.</p>
<p><u><strong>TORTILLA SOUP (feeds 4) </strong></u></p>
<ul>
<li>1 hot pepper (cayanne, scotch bonnet, jalapeno, etc.), thinly sliced<img src="http://farm3.static.flickr.com/2340/1934766136_abdcfc6272_m.jpg" align="right" height="240" width="177" /></li>
<li>3 cloves of garlic, diced</li>
<li>1 onion, thinly diced</li>
<li>1 teaspoon of chipotle seasoning powder</li>
<li>4 cups of chicken stock</li>
<li>2 cans of spanish tomato sauce (I prefer Goya&#8217;s brand)</li>
<li>1 large piece of skinless, boneless chicken, boiled in hot water for 10 minutes, cooled and then shredded</li>
<li>big palm-full of cilantro</li>
<li>juice of one lime</li>
<li>2 sliced scallion</li>
<li>4 corn tortillas (can use flour), thinly sliced into strips and deep fried for 2-3 minutes till golden brown ***<em><strong>NOTE</strong></em>:<em> You can cheat and buy a good brand of tortilla chips if you really have to</em></li>
<li>GARNISH: extra cilantro, a dollop of sour cream, diced avocado, sliced green olives (optional), some shredded cheese (I prefer <a href="http://en.wikipedia.org/wiki/Cotija_cheese" target="_blank">Mexican cotija</a> if you can get your hands on it).</li>
</ul>
<p><strong><em>What to do:</em></strong><br />

<ol>
<li>Boil some water (or use chicken stock) and boil your large piece of skinless, boneless chicken until cooked &#8211; about 10 minutes (depends on thickness). Cut in half to check if it&#8217;s done. If it&#8217;s not, throw it in the boiling water/stock for a few more minutes. Take out to cool.</li>
<li>Heat up your chicken stock or if using the same chicken stock your boneless chicken cooked in, make sure it stays warm (and that you have enough!).</li>
<li>Heat up a big soup pot to medium and heat up some olive oil. Add your garlic and onion and cook till medium-soft. Add your diced hot pepper and allow to heat for another minute or two to soften a bit.</li>
<li>Add your teaspoon of chipotle seasoning powder to the onions, garlic and hot peppers and stir around for a few seconds, releasing the flavor.</li>
<li>Add your chicken stock and stir.</li>
<li>Add your Spicy Spanish Tomato Sauce cans and stir.</li>
<li>Squeeze a bit of lime in the mixture, throw the palmful of cilantro in and allow the soup to simmer for about 20 minutes.</li>
<li>**<strong>OPTIONAL STEP</strong> &#8211; <em>Feel free to use some store-bought tortilla chips if you really dont&#8217; have the time/means to make homemade ones, but you know how I feel about it! It tastes better w/ the homemade kind.</em>*** Meanwhile, heat up some veggie oil in another pot. Using corn or flour tortillas (I prefer corn for this), thinly slice up some up so that each long slice is about 1/2 and inch wide. As soon as the veggie oil is hot, throw in your slices and fry till golden brown. When done, remove with slotted spoon and allow to drain on some paper towels. Sprinkle with some salt and a small bit more of the chipotle powder.</li>
<li>Now that the chicken is cooled, shred the piece into many bits for the soup.</li>
<li>Assemble your bowls by adding some of the topping ingredients in the BOTTOM of the bowl. Add some (only a bit!) tortilla strips to the bottom, enough shredded chicken to satisfy, a small dollop of sour cream, some cilantro, a bit of diced avocado, scallions, optional sliced green olives and cheese.</li>
<li>Spoon some of the reduced soup into your bowl over the toppings.</li>
<li>Add one more squeeze of lime to each bowl and then your final garnishes on top (more tortilla strips, scallions, bit of cheese, cilantro, avocado and another dollop of sour cream). Enjoy this comforting bowl of hearty, spicy soup!</li>
