Casa Mingo in Madrid – metro Principe Pio and the street Florida – please forgive my mis-spellings – has both cabrales and the best roast chicken in Madrid. And the sidra – apple, both natural y carbanato – a wonderful accompaniment to both!

What a great post!! This cheese sounds AWESOME. Thanks for the e-mail comment about Spain and links to your site. I didn’t know you were such big fans. And I will take you up on your rec to check out the Jose Andres made in Spain series. You’re so right about the Mario series. I like the guy’s food but the show/book is seriously lacking on any real education about Spanish food. You guys rock!

I encourage everyone to visit Cabrales region in Asturias and immerse yourselves in the true reality of this fantastic cheese: cabrales flan (a true surprising dessert), cabrales with morcilla, cabrales sauce, cabrales by itself… oh, gosh… I want to come there again before I leave this Earth!!!

hahah hilarious post, this cheese sounds positively formidable! i’ll definately try it and have to say i LOVE anchovies too. i’m trying to learn more about cheeses mostly i go in blind still though…
