Casa Mingo in Madrid - metro Principe Pio and the street Florida - please forgive my mis-spellings - has both cabrales and the best roast chicken in Madrid. And the sidra - apple, both natural y carbanato - a wonderful accompaniment to both!
Muy sabrosa!!!
You will enjoy!!!

What a great post!! This cheese sounds AWESOME. Thanks for the e-mail comment about Spain and links to your site. I didn't know you were such big fans. And I will take you up on your rec to check out the Jose Andres made in Spain series. You're so right about the Mario series. I like the guy's food but the show/book is seriously lacking on any real education about Spanish food. You guys rock!

Hi, Marta!! Thank you so much for all your amazing comments! I, like you, really encourage others to eat cabrales. We would love to visit the region one day as well. As you may be able to tell, we LOVE SPAIN! Muchas gracias, marta. -amy

I encourage everyone to visit Cabrales region in Asturias and immerse yourselves in the true reality of this fantastic cheese: cabrales flan (a true surprising dessert), cabrales with morcilla, cabrales sauce, cabrales by itself... oh, gosh... I want to come there again before I leave this Earth!!!
